I'd say pop mirror to confuse em, then poly the mage. In the event you can't get off a poly, use counterspell and or impact depending on your spec. (im not sure you can go far enough down the fire tree to get impact as a frost mage..)
If your a blood elf, you can always use Arcane Torrent to silence the mage for awhile, instead of using counterspell, as the silence will lock out all schools, and counterspell only locks them out of the school you countered, unless you have improved counterspell, but even thats only a 4 seconds silence.

Counterspell will be the key for CC'ing a mage. Depending on the mage's partner, you'll probably want to CC the mage's partner instead while having the DK put pressure on the mage.
Juking your cast can bait the enemy's counterspell. If you get the opportunity, always counterspell his arcane tree, this locks out his polymorph and counterspell (this will allow you to free cast in turn).
Remember, teammates are very important. If you DK partner is observant, and you can coordinate using your Deep Freeze to force his blink and Deathgrip + Ghoul Stun/Strangulate combo to force his Iceblock. Afterwords you can tunnel down the mage with his cooldowns spent.
Its all about coordination and knowing when the enemy mage has his cooldowns up, if you even want a chance to CC him. Always punish him if he blows Iceblock/Trinket to prevent CC with pressure, as he can't cast frostbolts if his partner is CC'd and he's running from two players.
