I have mentioned before that I wish Blizzard had or at least offered moderated servers. I personally would be willing to pay to transfer my toons to a server that had moderated trade and general chat.
Right now there is no recourse for just being a jackass. As long as you don't go beyond the extremely liberal guidelines set by Blizz, you can get away with almost anything.

I'm going to go out on a limb and say one of the many reasons for the change is gear.
There are so many people nowadays that expect things to be handed to them. They expect 10 minute instance runs. They don't want to learn the mechanics of boss fights in instances, they'd rather just be carried and have the gear without any work needed on their part.
With that attitude comes an I'm better than you attitude. With that comes the I don't care attitude. Its an unrelenting cycle.
I still go out of my way to help people when I can. I'm 42 and have been playing for over 4 years so I remember the days of actually having to put in some work for your gear. I remember what its like to ask for help on a tough quest, get it and be very happy and willing to help others.
I can't wait for these same idiots to start heroics in Cata and hit a brick wall for the first few weeks. They'll actually have to gear up, work hard and understand the fights.

Maybe it was how I was raised, maybe it's because I'm older than the "average" gamer, but the point is, when did the cyber-elitism, and cyber-bully take over the game? At what point did the anonymity of the net give so many people free liscence to put thier brain-to-mouth filters on the shelf?
Long ago. If you haven't noticed before... it's because, tbh, you weren't paying attention.

You leave trade on O_O? I keep it off unless I'm specifically looking for something.
It probably became that way once WoW became more popular. Before, at least to me, it seemed to be that WoW was generally for more intelligent people who liked Warcraft. Now it's the "cool" mmo to play (or you're called a nerd mercilessly), and it is constantly growing, thus adding more idiots into the game.
I'm so glad my guild is mature. And that my realm hates trolls to death.

Trade chat is absolutely despicable on my realm. It's impossible to hold an intelligent conversation unless you're talking to yourself. Everything is "y duz zelda always half to save teh princess," anal , did someone say Thunderfury? There's even one I have yet to see elsewhere: "15F Cali - Likes walks on the beach and anal." XBox 360, metroid's gun on his arm, why is the horse called invincible when I can see it, etc etc. It's never-freaking-ending, and it's the same $%^& over and over. What's the best raiding spec for a rogue? Bandage spec. WTS 20g PST followed by "that's a rip-off. that's only worth 3g tops."

This is the law of counteraction to every action, at work. When Blizz went after, what I have phrased many times as the xbox/ps3 audience to boost membership, it also brought in the poor attitude along with it. Also, with the focus of the game switching away from leveling to raiding, you tend to find fuses to be a lot shorter and with the majority of players just sitting around waiting for raids in major cities you end up having a lot of time on your hand to make stupid comments in trade.
The secret is to ignore them completely. You play WoW to have fun..they play WoW to bother you...don't let them and they will quickly fade.
Finally It all starts and ends with guild leadership.
Like the OP I am a older person...I set the rules down in my guild long ago...act like an idiot anywhere in this game and your out.
The long lasting top guilds on my server won't tolerate nonsense. I've read many an application where the applicant was remembered for being a trade chat troll or poor raid behavior and declined membership. Excluded from progression you see these same numnuts forming and reforming one new guild after another spitting venom at each other and never getting anywhere, eventually you find them transferring around from one faction or server to another.
The one thing I might add is that guild leadership have to communicate with each other. lately, and I included myself, guilds have had a tendency to become introvert. The rivalry of becoming the top raiding guild has perhaps played a part. Maybe it's time we take back the streets.

I whisper people saying "your using the wrong spells" "your talents arn't good" etc because i'm trying to help them by improving them. but most answers aI get are "stfu elitist $%^&". I am soooo far from being elitist i'm just helpful

Next time notice it's the same like 5 people who keep spamming it as well.However, about once or twice a day, in the evening, you can have a vaguely educated argument. Just last night there was one on rappers. I was honor farming though, so I only saw a few sentences of it. A while ago there was a political debate that wasn't full of OBAMA RULEZ UR MOM SUCKZORZ
But at least most of the annoying trolls are gone now. There's only like1 of the original 3 most annoying left :/
Also, if there were a moderated server, I'd totally switch to it. If I know about a class in question, I'll help someone out if they're doing it wrong, but sometimes I need to kick them from a group because I'm in a hurry or something. For instance, there was a group for RFC a long time ago and the tank had 300 health. He didn't know what a tank was. I wanted to kick him because I have no idea how to play a warrior,, and I had to leave in 15 minutes. I wanted to get hte dungeon down, and not have to google a bunch of stuff to have a competent tank. Fortunately, there was someone with a warrior tank in the group that taught him.

I do help players where I can, if they ask questions, or if they need help with a tough quest and I have nothing else to do.
One of the things I hate are players in the dungeon finder tool that don't say hello or respond to anything.
I was in a dungeon with 4 other players from another server, they were all from the same server, same guild and they didn't say anything, the healer didn't once throw me a heal and I died, he didn't say anything or even resurrect me they just moved forward and I got kicked, lol.
What kind of player do you have to be to do something like that? I don't get people, do they get a sense of satisfaction by annoying other players and making life difficult for them?
Usually if all the other players are from the same server they will 'gang up' on you.
Would love to see them in person and give them a piece of my mind.
I think the problem is mainly on very populated servers, there's so many people and nobody really knows each other so they treat others with no respect, because the populace is so large it would be hard to blacklist particular players for being jerks.
There's no "community" feeling, everyone else are 'just players' that you don't know and never will know.
WoW doesn't foster the social aspects of the game anymore.
