It's probably like the current HF/BT question. Which boils down to questing environment and slightly different gear itemizations. I will probably start in Vashj'ir and then do Hyjal on all of my characters, except for my group leveler.

Vashj'ir any day of the week for me. I love the underwater environment, the faceless ones and all that stuff. Another bonus is that you get Earthen Ring rep (and their quartermaster is there) and you get to visit the Abyssal Maw. (where you need to go to unlock the Throne of the Tides instance)
Hyjal just didn't feel that new to me until about half way through. Both are great zones though.

Vashj'ir for me, I always liked being underwater, just soothing, and good memories from being underwater. That and I always was fasinated by the Naga, I want to see some non-pushover Naga like the ones in WC3 Frozen Throne.

Both, probably do what I did on my hunter and warrior again: One does one starting zone, the other does the other; did that for Fjord and Tundra.... and my hunter got the short end of the stick, Tundra was suck compared to the Fjord heh.

for the alliance maybe, but for the horde, Tundra > Fjord any day of the week.
what, with having saurfang cover your back as you kill a necrolord and his army, rolling down the fields of nassan on a battletank to crush over 150 scourge units, introduce the taunka to the horde (the actual introduction starts on dragonblight, but the prequel is in the tundra, where after trying to defeat the scourge city of en'kilah they evacuate the village) and last but not least having the BEST blue weapon before zul'drak?
yes please :D
added bonus for the quests that have you working (and talking) with murlocs for the first time ever (murloc fans rejoice) and as a cherry at the top of the icecream: assault a scourge necropolis, and take down a scourge liutenant.
MUCH MUCH better than what the fjord had to offer to the horde (boils down to helping the forsakens to develop their goddamn F*bleep*ing blight)

on-topic: Hyjal may offer a nice quest-chain, the chance to meet with a great character (malfurion) and a fight with what I consider the nicest-looking villian ever (ragnaros) but Vash'ir offers more than that.
Variety.
in no other place u're gonna see a fully underwater zone (without all the hick-ups and disadvantages that come with being underwater such as having to gain oxigen, or moving like a turtle).
just picture it, full underwater combat, where there is no need to fight on the ground, you can float and fight mid-air, explore 3 sub-zones beutifully rendered, and otherwise have a chance in variety of the common ground combat we've been doing for the past 5 years.

Off-topic: yes, alliance quests in the tundra ARE lackluster (while their quests in the fjord are much better) but the horde ones are the exact oposite, Tundra is ten times better than working with those damn forsakens and their F*bleep*ing blight.
On-topic: I think in the end we will end up doing all of them, the real question is "wich one to do first" because obviously we can't (and shoudn't) do both at the same time.
I mean really, you could do 1 quest in hyjal with 1 toon, then log off and do 1 quest in vash'ir with another, but that's hardly enjoyable, it's better to finish up a zone, and then do the other. The dillema is where to start.
the quest-flow for post-80 characters in cataclysm basically is:
80-to-81 and 81-to-82=Hyjal or Vashj'ir
82-to-83 and 83-to-84=Deepholm or Uldum
84-to-85=Twilight highlands.
as a result, while leveling from 80 to 85 we're gonna visit 3 zones only, leaving 2 of them optional, and while we eventually will do those 2 left zones, the real deal here is wich to do first.
as I said first, Vashj'ir offers a change in mechanic, so I'll start there, but of course I'll also do Hyjal when I can.

^This. I loved Fjord over Tundra (though I am Horde)
I will be doing the same, Hunter main in Hyjal, Ele Shammy in Vashj'ir.

I'm going to do both of them, probably starting with Vashj'ir. The biggest advantage is being able to unlock the Throne of Tides instance earlier. All of the quest rewards from both zones appear to be either sidegrades or downgrades to ilvl251+ epics (mostly due to sockets), so I'm not too worried about comparisons of itemization between the two. I'm sure I'll enjoy both of them.
It seems Vashj'ir is going to be the more popular of the two. The way the cards have played though, I won't be able to play Cata until several weeks after release. At least I won't have to deal with the crowds.

Vash just because of the instance unlock... but I am going to then go back and do Hyjal right away and do all the zones from easiest to hardest. Generally do what I do now with my alts. Queue as a DPS and quest while waiting. I'm not sure though, I think the first few weeks are going to be very for pugs. Probably do the first few runs with guild only.
I like slightly being above the intended level so i can enjoy the questing more. It's also nice to get all that extra gold in the last zone.

Just like how you get a seahorse after the first few quests in Vashj'ir, which is just as fast. :-)

I liked Vash'jir more, it's so smooth and it has fun quests where you "drive" a shark and it eats naga etc.
Hyjal was okay but kinda lack-luster imho, I dunno what others think but that's my opinion.
So yeah, Vash'jir for me.
