Well i'm contemplating on just stopping at 68 or 70 until Cataclysm is released, because the price was cut in half and the level requirement was lowered. :)
I was just wondering if it was necessary to get the flying, because I wasn't sure if there were any zones that made you fly up into something for a quest, dungeon, etc.

It is possible to hit 80 without going into those zones that require flight (SP and IC), but leveling goes tons faster the earlier you can fly.

Hmm....so what do you guys recommend?
Because the 1000g is quite alot to sacrifice (I used RAF to get to 60, which means no professions leveled, and not alot of money from quests)
I got the 1000g from my DK which I leveled to 72.
Wait but it requires you to use a ground mount from 70-77 right?
Just the last 3 levels are hell?

Just get it now; once you have the flight, you'll be making a crap ton of gold just from questing anyways.

Your first toon through can't get CWF until 77. After that, he can buy a BOA tome that will teach any of your 68+ toons CWF for 1k as well.

Before RDF, you would be about level 77 when you first entered Stormpeaks. Now, you could easily be 80 and have seen SP.
My first 80 in Northrend, upon xpac release went like this. Level 70, went to Borean Tundra, Dragonblight, Zul Drak, Stormpeaks, and did less then half of the quest in Icecrown when I hit 80. So that was with no rested xp, plus I ran the dungeons only for quest. I might have done 10 dungeon runs total.
Now, with RDF, no rush to 80 like at the start, you could hit 80 before getting to a zone that required flying.
Flying however, is faster, BUT, I'd say that without flying, you get a better feel of the zones. You feel more apart of the quest, imo. Flying is just grab quest, zoom up into the air, fly over trees, land, kill something and then back into the air.
Having never experienced Northrend before, a flying isn't needed. And I'm assuming you don't currently have an 80, so that would mean you'd have to wait until 77 to get flying anyway. So three more levels of no flying is no big deal.

Just get flight. It is horrible leveling if you don't. And if you do, there are some pretty cool quests and lots of money. You will easily recoup the 1000g you spend if you stick with one zone (I prefer Stormpeaks, but to each his own) and do all the quests.

Hmm....seems like going with the Cold Weather Flying will be a smart idea after all. And if my DK somehow racked up 1500g at level 72...I'm pretty sure I can make that much at level 77.
and wolfey you mean to just dungeon grind it out to 80 from 77 so theres no flying required right?
(kinda tired of doing that now, 1-60 made my brains blow) x_x

Hmm.....ok I guess :)
I just hope I don't regret it, because i'm planning on using RAF to make another 60 to level to 80, which is another 1kg :(

I believe that mount moves at walking speed or some such, maybe slower than normal movement speed. I've never used it.
Just get the Cold Weather Flying. You'll make that gold back in spades as you quest, and you'll get those quests done significantly faster than you would have. If you decide to do all the quests in Northrend, you'll be rolling in gold, ready to gear yourself up, or keeping it to invest later. What you do with it is your choice.

It's 150% these days, this was a 60% flyer at the start of WotLK.
A lot depends on your trade skills. Some skinner/miner I started on an isolated server got 1k gold through auctions before reaching level 30.
