I just excluded the sanc pieces as I started before you said VoA is ok. And I put all the pieces that you don't need to step into a raid to get.
Just trying to answer the first question in bold.
"Does having all available non-raid attainable gear (including Emblem of Triumph and craftable gear) get you to 5800 GS?"
My actual Mage has a 2943 score on wowhead. And it has a total of 5806 GS. So the created profile with a 2996 score must be over 5800. :D

@Ippon: Anyone who thinks that if everyone was just an Auction Guru and noone actually earned money the primitive way, the economy would look like it does now... is an idiot as well. Auction folks need the common folks. There has to be some kind of gold income from a natural source.

That is what bots are for. And dailies/farming is really for stupid people unable to use the auction house. Dailies/farming grant less gold/time than crafting/AH, so the only reason to do it if you are not a bot, it is because crafting/AH is too complicated for you.
P.S. Because i feel I need to specify it, I am talking about people who dailies/farm specifically for gold, not those who do it while leveling or to get reputation/rewards or some other stuff like that.

AH-trading is a zero-sum game (actually, less because of the inbuilt goldsinks). Every gold you earn on Ah trading is more then a gold someone else has "lost". Someone has to actually do the work; the thing is that it's mostly bots that does it these days.
@Crassus: Baddiebad's gear was very tongue-in-cheek, aimed at the baddies that only go for GS. I was surprised by how much of the gear actually was good though; and that bear I linked actually has very good gear; some of it could be improved by PvP
Edit: Oh, and those shoulders are also terribad for hunters, and you forgot to add the cost for Battered Hilt.

Same with anyone who literally cannot do 25 man Marrowgar as a DPS on normal mode with a 30% buff (really, it shouldn't even be
possible
for you to cause a wipe), so I think the fact that Baddiebad is not using the Auction House is a valid assumption.
