yup, taking shadowfury is always going to represent a DPS loss since 3/13/55 is a little behind 0/18/53 and 0/13/58 even IF you can make the most of the extra gearing available without 3% hit.
the OP can't take advantage of that so the DPS loss will be quite clear (though not massive).
tbh, the spec the OP is using looks fine to me. taking a point off iSL will impact personal longevity and replenishment contribution but if they really want shadowfury then it's not a terrible place to find the point if the group doesn't need your replenishment anyway.
i play demo for almost all fights but have a destro spec with shadowfury for saurfang HM. that spec also takes soul link since damage taken is each players' responsibility in HM content. the spec is not cookie cutter but i know exactly what i'm losing and what i'm gaining from the choices made.

one source is not nearly enough for a 25 man raid. you likely do have more sources of replenishment than you think but it would be worth checking with your raid leader to be sure. you're right that having good uptime on replenishment is vital for your mana users.

You can check my Lock's Destro spec for what I'm using. I'm hitcapped and we have 2-3 sources for Replenishment so I dumped the extra points into Unholy Power. Our Boomkin Typhons the beasts back when they spawn and then I stun them with shadowfury. I also use my Glyphed Shadowflame to give two of em a 70% movement debuff.
Could probably do without the Glyph, but I can't be bothered to change it since I only ever use this spec for one boss each each.
respeced my offspec to PvP so don't bother looking :0

just to be clear (and not in disagreement with any of the comments in the thread) the 0/13/58 build doesn't only take iSL for the raid buff. it's personal DPS is also propped up by iSL (via MUCH fewer GCDs lost to LT). the other comparable build in terms of output is 0/18/53.
however, this (0/18/53) isn't the build you use when your raid doesn't need your replenishment, it's the build you use when you want to have soul link without losing output.
i just wanted to reiterate that this thread's discussion is all about taking DPS losses for utility. if you can gear for it then suppression builds are the most versatile without losing too much DPS. if you can't make the gearing work then you will be losing personal dps. you should really only ever do that if your raid has specifically asked you to bring some utility.
-or of course, you present your options to the raid leader who agrees the loss is worth it for the raid's success.
without a very good reason to do it the average raid member is advised to spec cookie-cutter and go for the most personal DPS they can.

seems like a sound plan. shadowfury can definitely help.
saurfang is pretty easy though (though i know "easy" is very relative) and good organisation is usually the key.
an AoE stun can help while you all learn it but planning exactly who is DPSing which add, making sure people are spread out enough so he doesn't get too much BP from the AoE, and having someone give a count down to beasts on vent should be enough to make the encounter feel much easier.
remember that on hard mode the beasts absolutely can not reach their targets. aim for this to happen in NM too. give people responsibility for their own add and less opportunity to hide in amongst the team.
