What's your focus in-game, PvP? Then human is probably preferable. Race isn't usually a gamebreaker though, even if you're a completely "wrong" race for what you're doing.

It all really depends on what your actually after. Speaking from experience, my
Human
Racials
give me a couple of nice utilities. In PvE it gives me another Fear breaker (for those few bosses who love the stuff faster then Berserker Rage can keep up). In the bit of PvP I do, they can give me a small edge against rogues - nothing is more fun then breaking out of their stunlock, turning around, seeing their stealthed form, and saying "Heyo!". Of course, my warrior's choice of race was mostly based on it being my first character, and I wanted a Human :D
Best bet would be to think about what you really want to do, then go to the "create a new character" screen, select Warrior, and then hop around the races. But dont forget that most racials only have a slight effect on your character when it comes to higher end stuff like Raiding.
(This entire reply is to cover the fact that if I tried to make the "what race" decision for a warrior these days, I wouldnt be able to make up my mind :D )

flip a coin, you're the one that has to stare at the toon. I say roll a lvl1 toon of each and walk around and whack a few things. I did this and discovered that i absolutely HATE elf swing animations so would never roll a melee elf, regardless of how good their racials got.
Overall, I think dwarves are the most well rounded. The extra crit to guns is amazing! =P
But, seriously, stoneform is one of the best designed racials. Good as a small tanking cd, but shines as a poison removal tool. As a warrior, we usually survive the initial rogue stunlock and stoneform gives you that little extra bit of survivability that lets you finish him off.
mace expertise is also good for tanking.
