A dead world... pretty much as simple as that.
As for the actual pieces making up the King before the end run 'escape': Ner'zhul was doing it to get a physical body back, Arthas did it to finally become the 'real' king and prove to his father and all the rest who doubted him that he was the best.
Beyond that... in Wrath itself; nothing more then a bad Saturday morning cartoon villain.

Pretty much, the only motivation of the LK is to kill everyone and rise them as undead under his command. That way conquering Azeroth.
And, for what he would have done after gaining complete rule over the world he may have wanted to destroy the Burning Legion.

I'd imagine it's something along the lines of an eventual attempt at usurpation of the Burning Legion. At least, that's likely what I'd be going for...

Yes, as well as appeasing the Burning Legion and likely being given more lee-way because they wiped out Azeroth's populace, which in turn makes a coup by the Scourge easier.

plus betraying your own race and selling it to demons (Ner'zhul) can kinda mess you up
Well...in his defense, he wasnt aware it was a demon he got help from, and when he became aware he did try to undo what he have done, but was sold out by his apprentice, captured and tortured for thousands of years until his body was non existing, and then continued to be tortured in soul instead of body. And then finally when it came to a stop he was imprisoned in a set of solid frozen armor, until he managed to reach out to Arthas and got him to finally grab the sword.
If anything
THAT
would scramble your view of the world a bit.
Considering the epic stories behind both Ner'Zhul and Arthas I too feel its too bad the Lich King has been derived to a mere saturday morning cartoon villian, as so promptly described.

The problem with baddies everywhere is that they never think things through. If they actually managed to enslave the entire nation/world/universe, what happens next? There's nothing else to do! They just lounge around in their palace all day being waited on hand and foot. Sure it'd be nice for awhile, but then the boredom would set in and they'd go crazy.

Well that was the main thing; had the original Scourge(the group still allied with the Legion) would have succeeded, the undead forces would have been absorbed into the overall Legion, and Ner'zhul would have possibly gotten his body back and transformed into a fel orc or something, still being a leader of his forces. Of course, if the rebel group had succeeded, more then likely it would have just ended up with the Scourge and the Lich King kicking back and enjoying being the only intelligent life on the planet, while the corpses of all the leaders were played like puppets for his amusement.

See, the people over there? They are
living
.
And, like, his people, they are
dead
.
If you kill the living, they become dead. Then you can raise them.
Please read the post before acting like a smart@$$.
Um, that's more or less what it is......

Considering that the OP asked about his motivation and not his goal, I'll co-sign with
Adamsm
and say that it's his daddy issues.

Whats the LKs motivation? Same as everyone elses: To be satisfied with his existence.

1. A lot of Vrykuls and cultists never actually died, just like his majesty before that God damn patch.
2. Although unwillingly, Arthas once saved the world from the Legion (skull of Gul'Dan incident)
Hence, his HIDDEN motivation COULD be building an army strong enough to outmatch the Burning Legion and save the world from destruction, even if it means decimating 90% of its population. 10>0, you know.

So, sacrifice the many to save the few?
Or reversed, if you take into account the whole universe and its many planets.
Edit: On the becomming bored subject. It is easy for a ruler of everythng to amuse himself.
Re-enactment of some war.
Do enslaved Syvannas
Hang some random peasant
Do enslaved Alexstrasza
Develop WMDs
You see where I'm going here...
