yes. you want the stam and dks have a passive ability that converts str into parry rating.
as a general rule of thumb having a large health pool outweighs avoidance.

threat is a factor but usually only in terms of weapon speed. since threat isn't an issue for blood. debating and theorycrafting the threat differences and the mitigation would be a waste of your time so your on the mark. you want to compare stam and dmg mitigation of the 2 items. so you also forgot the armor that agi provides. however, i would still go for the stam and parry because in stat weighting stam is gonna be king.

Yes, or the CEC if you cant get Ramaladni's. Its going for about 12.5k on my realm, thats almost enough for a chopper. And a chopper>QD in usefulness and awesomeness unless youre a lore freak. From the two, take the agi one. Why? It has the most threat/dps(ArP=ftw, haste isnt), avoidance(more dodge than the other has parry) and EH(the armor outweighs the few extra hp).

Perhaps I should introduce you to my friend weapon damage. Every single HS or Oblit (I dunno what spec guy is) hitting harder will be a bigger threat gain than some extra ArP (at the cost of strength). As an additional frame of reference, no DPS DK should ever use the agility one over the strength; sim it if you don't believe me on this. ArP *is* sexy, but it's not enough in this case.
Having said that, the agility one IS a good tank weapon, but so is the strength; I think the advice to use CEC or Ramaladani's is pretty solid, but if you want to use QD, either one is a good tanking weapon. Apoc is (as I understand it) right on the agility having more avoidance and EH, so just decide where your priorities lie and pick the right weapon for you. Have fun!
