If you learn any one thing from that fight, let it be this: Do not stand in the void zones, else Defile will bend you over and rape you with a rake.

your melee need to spread out then. as much as possible, his hit box is pretty big.
split them into two teams at an angle behind him, that should limit the spike damage.
But, in all fairness, a discipline priest owns this fight. period.

It just sounds like your guild is having problems dealing with Defile, plain and simple. Everyone should have The Lich King focused, and be keeping an eye on his Focus Target frame. You have a good 2 seconds to react to when he switches targets, and everyone should be looking at who he's targeting. Then if you organize it so that anyone with Defile runs to the teleporter and everyone else runs to the Frozen Throne then it should weed out Defile from the group rather quickly.
During phase 2, The Lich King should be tanked very close to the center of the platform, and everyone should be stacked on one point so that anyone who gets picked up by a Valkyr will be traveling in the same direction. The 1st defile comes a few seconds after the first Valkyrs, so you can spread out soon after the 1st set of Valkyrs drop. The 2nd Defile comes at just about the same time as the 2nd round of Valkyrs, which is where my guild had a lot of trouble with it. The real trick is keeping your eye on LK's target and reacting quickly by getting out of the group. Then after that it's just about staying stacked in the right spot for the next round of Valkyrs and make sure nobody gets dropped off the edge.
Defile F'd us (my guild) for the first 40 or 50 attempts. Once you figure out how to manage Defiles and getting everyone stacked up
near
the center for Valkyrs, getting to phase 3 should be just a matter of time. Remember, even once you get to phase 3 you need to follow the fight mechanics. Defile will still happen, but you can stay spread out because there won't be Valkyrs.
If I were you, I would try switching to Disc for a number of reasons: it totally owns Infest; it's much easier on your mana; your tanks' HP will effectively grow because of your shields; Defile doesn't grow in size if the damage is absorbed (hint: PW:S spam); phase 3 vile spirits cause a lot of spike damage when they explode, which can mostly be prevented by shields (just remember to kite them!).
Good luck :)

Don't worry, you'll need a lot of regen for shield-spamming anyway. You've already got the 4-piece bonus, so all you should do is replace the SP/haste gems for either straight SP or SP/intellect if you're going to switch to shield-bot.
Aside from that, you shouldn't really need to re-gear.
If you're switching wholly to Discipline (see what I did there?) then that means you'll probably end up tank healing a lot of the time. If that's the case, start picking up as many SP/crit/haste pieces as you can, because you can't have enough crit or haste as a tank healer!
