Any gathering profession
will grant you good money
while you quest/level 1-80
. I'd go mining/herbalism coupled with skinning. It all depends on your server's economy but generally speaking... ore always sells good.
As soon as you ding 80 and have good money you can
drop one profession
and get a crafting one (engineering is amazing for dps, gadgets, utility). If you plan to raid and maximize your dps, go engi/alchemy or engi/jc (strong dps bonus there).
If you feel you have all the gold you need, drop the 2nd gathering profession and get another crafting prof. Gathering is amazingly annoying and time-wasting... and can be replaced by doing heroics, dailies, etc. Think of gatherers as slaves who fuel the game economy. Focus on more interesting stuff, such as daily quests, dungeons, playing AH and so on.
Note: if you love achievements and plan to travel all around the WoW world, keeping a gathering profession is still a good choice. Old-world materials can sell better than Northerend stuff (check your AH to see how's your local market).

I would say JC for sure as one. +34Agility is amazing for hunter dps. Sure, you miss out on the little gadgets of Engineering, but you want steady improvement. As for the second profession, I would say LW for the +114AP to bracers or Inscription for the ~100AP Enchant to shoulders.

If you're looking to min-max, BS/JC is undoubtedly the way to go. BS is useful simply because you get two extra sockets. It makes a bigger difference than you might think.
You make a good point. With LW you would get 114 AP, but with BS you would get say 2 +20 Agility gems which is 41.6AP and .48% crit chance. Its personal preference. Or 2 +20 ArP gems which would be good for capping to 1400.

It doesn't work that way. The difference is 80 AP from the normal enchant.
And for Hunters, 40 Agi >>>>>>> 80 AP.
(Of course, for MM Hunters, 40 Crit >>>>>> 80 AP too, which is why every time I see a MM Hunter with LW/JC, I facepalm.)

When you sim it out at any sort of higher gear, this probably isn't true. 40 Crit basically equals 80 AP, so the difference between the two (LW and Skinning) is incredibly small and insignificant. For instance, in my hunter's gear, 1 AP= .8 DPS, while 1 crit = 1.614.

Wrong. 40Agi is around 112 AP and .4232% crit.
