Its really according to what you want to do. I will not say pick what you want because I have asked for help with this before and people have said that same thing. Now on to helping you.
Ok lets sort out what you want to do first.
Do you want to heal, tank, or DPS or maybe have a mix of being able to do one of them.
If you are into pure DPS and you don't want to tank we can break that down as well
Do you want melee or ranged dps?
If Melee do you want Slow attacking with 2 handers or do you want to attack really quick with 1 handers or 2 2 handers?
If ranged what type of damage do you want to do. Mages are masive crit machines and do insane damage while locks are major doters in some cases. Hunters on the other hand have pets that dps as well.
If you want to tank you could go warrior or druid. both allow for dpsing as well. Druids can heal and ranged or melee dps.
If you want to heal again what are you looking at? Do you want straight healing or hots? Druids provide extremely good hots while priests have 1 or 2 hots with a range of Massive direct and aoe healing or the ability to protect party members from damage all together by using bubles. again as said druids can tank and also do both ranged and melee dps, Priest on the other hand have a very fun Shadow dps. with a mix of dots, Channels and casts that when set properly can send out some amazing dps. Mind flay from them is one of the most powerfull AOE spells in the game in my opinion. In my 25 man ICC my shadowpriest will pull 20 to 25k dps while all the other aoe memeber exept maybe druids poping startfall and hurricane only pull 10 to 20k. Some times a rogue fan of knifing can pull 25k with me.

Warrior and lock/priest.
Warriors are amazing. If you want to tank with it it isn't hard to do and you can tank in instances. My warrior is a fury warrior but he has a tank offspec so if I ever decide to run an instance to pick up a piece of gear I can que as tank and almost always get a insta pop que.
Locks are great solo leveling classes you can level 1-80 by yourself they also have alot of raid and pvp utility with their different buffs and the ability to dps while moving thanks to dots. A priest on the other hand has to stand still to dps good. My dps on a 25 man Patchwerk with good buffs was at 8.7k while in a battle like marrowgar or any other fight where you have to move alot it drops to 5 to 6k. We also bring alot of raid utility as alot of times I as a shadow priest is the only priest in a pug so my fort is a godsend. With vampiric embrace you heal as you damage with shadow spells and I know that takes alot of stuff off a healers plate with that little bit of healing to everyone. Then as you said you can also test out healing with that.(gonna say this normaly I just alt tab while healing with every so often going back and just bubling in instances for the simple fact tanks can solo most of the stuff now.

as for the warrior thing I was arms/fury till 40 when I dual speced. As for profs its according do you need gold? Does any of your old toons have it. If they do then you don't really need it I would really go with a gathering/crafting prof. If your alliance Dranei is really good as they have the self heal and a buff to jewelcrafting which would make JC/Mining good or you could do anything you want.

a good idea might be to multibox or even RAF someone. level a priest with a friend leveling something that can aoe mobs and you will have a very quick leveling time. Then just have them grant 30 levels to a rogue and they can level a second character with your warrior maybe a clothie and then they grant that 30 levels to the rogue so you have if you just leveled to 60 3 60s or 2 80s and a 60
