I am really loving having a druid alt with herbalism. It is the fastest easiest way to do herbalism imo. Even if you aggro a mob you can cyclone, gather, shadowmeld, flight form and keep going. I forget when the last time was that I had to kill a mob while gathering. You can also stealth into caves if you spot something you need to gather in them. There is virtually no chance of getting ganked as a druid while herbing if you're on a pvp server.
But I'd pick DK for mining because of starting at higher levels and speed increase.

Just start up a DK. I enjoyed playing mine to 80 and doing a bit of heroics with him and getting a bit of gear.....but I lost interest soon after. He does however make a great farmer. Mine is an herb/inscript, which provides me with all the herbs and glyphs my others need.
Also, if you double herb with mining....on my server outland and old world ores sell better than northrend stuff these days. You can make a good deal of money off what you don't use.
Other classes that are good at farming (mentioned) Druid, and also Hunters (pet keeps agro, fast mount speed in BM spec), and Rogue (stealth)
Be wary though, once you get one alt for professions, you may fall into the trap I did and have more than one. It can be habit forming :)

I agree that a DK will be the quickest to get up to the required level since they start at 55, also if specced correctly they can move 20% faster whilst mounted... however, my vote goes with the Druid. For a gatherer class I personally don't think it can be beaten due to the instant shifting in and out of Flight Form (
Swift
will be needed to compete with everyone else).
Also, you have the added benefit of being able to pick herbs without needing to shapeshift, making it even faster to gather compared to other classes (unless this has been "fixed" recently, I'm not sure if it has).
Another thing, I don't think you mentioned if you were Alliance or Horde, but if you're Alliance, Night Elves can get out of combat easily using
Shadowmeld
and instantly fly away regardless of the proximity of aggressive mobs where as others are unable to do so. If you are Horde, Taurens obviously get
Cultivation
as a little boost.

Get a DK, once out of starting zone and in the 200's skill wise, just farm herbs all day in Felwood and STV, sell them for 3 or 4 times the price of Northrend herbs and buy the Northrend herbs with your pocket change.
Less competition for more profitable herbs and you don't have to level the character. Win win.
^^^this if you're truley going for efficiency. At lvl 55 (instantly) lvl up herbs and mining. You have free epic mount and increased speed. Also, if you're staying this lvl, get yourself a riding crop from the ZF quest. Just and idea of price on my server: Dreamfoil, Mtn silversage, and plaguebloom go for usually 50-60g/stack. Sansam is 30-40. ALL northrend herbs can be bought for under 30g/stack. I may recommend lvln to 60 though. Loops around hellfire will give u all the above herbs plus TONs of fel iron ore (70-80g/ stack)
BUT BUT BUT if you're one of the people who likes to gather the actual mats u need and not buy/sell, go druid hands down. People can make a case if you fly x seconds, you get more out of a dk/pally for mining since flight speed boost. BUT for herbs druid cant be beat, esp if ally for reasons above.
Agreed, Druids are the ultimate herbalists. Not having to shift out of form is a HUGE bonus, especially flight form. Swoop down, pick up your herbs, and take off. If a mob or even a player try to gank you, you just take off. It may not sound like much, but being able to stay in form and not have to mount from herb to herb is a big time saver. Even with the sub 60 areas, staying in travel form is much easier than riding up, dismounting, herbing, remounting and taking off.

Death Knights are great since they start at lvl 55 and have the speed buff, but I'd go druid imo. This is how I would do it. Get heirloom chest and shoulders. Spec feral tank. Get a gathering add on that tracks the spawn points. Level by doing randoms while farming zones in order for herbs and ore. Prowl and sprint can get you around so you dont waste time on mobs between nodes.
