I'm sure you're wrong.
Even if the model doesn't account for Human racial, you can edit the sword in question and add 24.6 expertise rating to it.

You may also be running into the issue with aldriana's sheet where if you turn on the "suggest gemming for expertise" option it will always suggest you gem expertise as there is no cap for expertise's effectiveness in that sheet.
Using that sheet for estimating gains from expertise you have to watch your exp values closely to see when you hit the cap and once you do you should turn off this option.
I would suggest testing out iDPS as it's layout is much easier to read, although I don't know if it accurately models racial expertise and seperate weapon types, but I'm pretty sure it would. It would also give you easy to see EP values for your character as you gain more expertise.
Like others have said exp for combat is not a great stat as your finishers cannot be dodged...so your question about capping your OH exp for finishers is kinda moot. All your finishers will not be dodged so that doesn't matter. You would only cap expertise to increase dps from, white hits, poison dmg, and CP generating abilities and gemming exp may or may not be the best route. If you're applying to a top 150 guild and they are telling you to gem ArP to get in, well gem the damn arp and get in the guild. It's much easier to fall in line to get in the door, you are not a special and unique snowflake.
