Skinning for Disc

My disc priest is currently a tailor/miner. I've been considering droping mining since I already have other characters who are miners also. I just don't really know what to replace it with...
I'm hesitating between Inscription and Skinning (I already have other toons with crafting proffessions (Jc/Enchanting/Alch). So, I was wondering if the crit bonus I would get from skinning is any good. (I already have around 34% holy crit, so it's not like I'm terribly lacking either... I was just thinking that the crit bonus would be better than the stam one) Any other suggestion on what profession I could take up?

Skinning is retardedly easy to level and while the bonus is nice, I think there are better options. Of COURSE, the better options are far more costly to level, but the rewards would be far more worth while.
MOST of the crafting professions yield a similar end-of-day result, almost all of which I would take over Skinning.

On the other hand, the 46SP bonus from Inscription or Enchanting pales in comparison to the 3500 raid buffed SP that you probably have if you have an average iLvl above 245.

If what you are after is a stat increase you probably won't notice, then pick what ever you like. I suggest you look at the other money making or gear crafting benefits of each profession in making your decision (for example, de for enchanting).
Also, I'd like to mention engineering. As a priest, staying alive is extremely important. I wouldn't want to ever give up my
Nitro Boosts
. If you've gotten the attention of a hostile mob, hitting your Desperate Prayer / Nitro Boosts macro can mean you live to continue healing. It's also useful for catching up to the tank after drinking, good for pvp or pve, and just plain fun. Add to that the benefits of repair bots, a portable mailbox, portals, and cool crafted pets (who wouldn't want a mechanical yeti), and I'd say consider it.
