Was just wondering if when the "stock" they have runs out will it still be obtainable when they re-stock or will they never stock them again?

The "stock" refers to how many mount codes they have generated and loaded into the store's database to hand out to customers. In order to "re-stock" all Blizzard will have to do is generate more codes and add them to the store's database. Generating those takes some time but I'm sure they are probably generating more codes almost as fast as they are handing them out today given the amount of those things they have already sold.
If they were limited stock they probably would have stated that when they released them. Given they will probably make close to $3-4 million today alone on those things I doubt they would make the stock too limited.

It's a cash grab to begin with. I don't see them limiting how much cash they can grab lol
Heh, me either but what it does do is let them test the queue system before they use it for Blizzcon tickets so they know how it and their customers will react as well as give them a good estimation of whether they need to add more hardware/bandwidth for the blizzard store before they put Blizzcon tickets on sale.
I'd say with the comments I've seen they had a pretty successful live beta test for their Blizzcon ticket queue system, and made a nice profit so far as well.

Anyone here work in a large scale IT?
How much would you pay to do a honest to goodness stress and load bear test on a system before going live?
Well Blizz did that and racked in some money too.
Hats off to them.

You must be mad to pay $25 for a mount, that does nothing but look nice. Blizzard must have seen you all coming a mile off. :) :) :)

Not a mount - a mount for every one of your characters on that account, and a mount that scales with your training, meaning that you technically never have a to purchase another mount in-game - only training.

I thought this too, but I think thats incorrect. The mount scales with the fastest mount that you own, not the skill of riding that you have. So at level 39, you have a 60% ground mount, when you ding 40, the celestial wont automatically scale to 100% when you train that level of riding. You would have to purchase a 100% ground mount for the celestial to scale up.
Ah, my bad. Thanks for the correction.
I would guess that the base mount must start at 60% though? Or if you hit level 20 and train up, do you have to buy a regular mount before you can ride this one?

You must also be mad then to pay $15 every month to rent an character (or characters) from Blizzard and spend so much time getting it gear, or gold, or honor, or... whatever you do.

I gotta random code for Blizzard: "123456789"
Unless they already used it.

Note: changes depending on your riding
skill
Aye, I hadn't of trained level 40 riding on my priest yesterday when I activated the mount, hopped off it, hopped back on, and it was at 100%.

The only items they have stated are truly limited quantities so far are...
Gryphon Hatch-ling+Gryphon Stuffed Animal
Windrider Hatch-ling+Windrider Stuffed Animal
They might make purely digital versions of the hatch-lings in the future but according to the pet store the stuffed animals are limited time only.
Yeah if they ever offer training beyond 310% speed for mounts you can likely go that new speed with this mount without any sort of work except buying that new training. Obviously right now getting a 310% mount is either done through...
Luck
Skill
Working Hard
So it would have to bypass that and go back to the give us 10k gold and you can go 350% or something.

Don't look so smug. Did you really think that I would entrust my character's travels to a simple glittery horse? Hahaha. Oh no, no, no, it was merely an instrument, a stepping stone to getting all of my toons their own fleet of mounts! It has all led to this...and this time, you will not interfere!

+1
As for the actual topic,
Blizz confirmed that it's not limited stock
.
