If you don't like dealing with people of different age groups then WoW, and the MMO genre, isn't for you. Do the little kids annoy me with their gold begging and naked Belf dancing? Yes. Do the 20 somethings annoy me with their drunkness and l3Et attitude? Yes. Do the old people annoy me with their deathly slow pace? Yes. But the OP and other people need to realize that there is nothing you can do about it so just get over it. Blizz puts right on the box "Your experience online may vary".

I would prefer a karma system. You get rated for your play with others.
Would probably never, ever, work properly due to how easy such a system would be to cheat. However, if there was to be any sort of segregation system in WoW I'd want it to be this.
Personally I can't see why OP can't be mature enough to just ignore and avoid players who he doesn't like to play with. Yes, it sucks to encounter them the first time but after that you can generally solve the issue with but the click of a mouse. Seems far easier then asking for Blizzard to start forcefully separating the community over something as trivial as age.

Generalisation FTW realy. Not doubting any sientific stuf but saying while I might be immature at some points now at the age of 19 I doubt you would ever know it. I just realy doubt that you can simply say how old sombody is by the way they act. I never say my age and al that but when asked it's mostly by a friend in a /w and mostly I get a ":O" as responce.
On average you can say a lot and it is a realy useful thing. Locking me up with immature morons is somthing I won't tolerate though.

2. Kids are w**nkers. Okay I should qualify that generalisation by repeating my opening point - there are plenty of mature, pleasant players out there of all ages, but the one tosspot you end up having to /ignore is - 9 times out of 10 - a child of some description.
and since over 90% of the player base are technically children or under age 21...

The average Wowplayer as far as I have heard and read is between 25 and 27 years old.
Try again.

I have not seen a scientific study upon which I'd base any such statement. Did WoW publish numbers? They are really the only ones in a position to provide such information.
The Daedalus Project
appears to have performed a survey back in 2005 based on WarcraftRealms.com data; the results showed the average age of the WoW player at that time was 28.3. That data is likely very out-of-date and not a scientific sample, but it does show a higher average age than most would suppose.
