New tankadin not sure how to gem/enchant

So I've recently hit 80 and gotten myself some gear. I don't exactly know how to gem/enchant my gear, but I've been told stacking stamina is the way to go? Any help is appreciated.

You can enchant your chest with +10 stats I think.
Stickies would be more accurate though.

Never tried the actual math, but I'll try it now! (this is for Pally's, since we're talking about Tankadins)
+10 Stam
+10 Agil
+10 Strength (threat, useless for effective health)
+10 Int (useless)
+10 Spirit (useless)
Let's say you have blessing of kings (+10% all stats) and blessing of sanctuary (+10% str and stam).
+10 Stam x 1.10% x 1.10% = ~12.1 Stam or ~121 Stamina.
+10 Agil x 1.10% x 1.10% = ~12.1 Agility or 24 armor and 0.48% dodge.
So, is 121 Health, 24 armor (snicker), and 0.48% dodge (not used in effective health, but I added it in anyways) > 275 health?
The answer is a resounding no.

actually, kings doesn't count twice over sanc. so it's even less than you came up with. i'm convinced, but if i switch out my enchant i REALLY want to see myself survive a hit from a boss and be at 100 health some day.
Gotcha, just wanted to include as much as possible in case I forgot something ... knew it wasn't close :)
Every little bit matters, or else it could be a slippery slope...why use a +30 stam when a +24 is cheaper? Will 60 health really save me? etc etc...
On another note, I do remember being at 101 health the other day on Blood Princes...this is with a pool of ~58K buffed health, so thats ~0.0017% :P ... but that's a moot point b/c if I would have died, my ardent defender would have saved and healed me for quite a bit ... paladin...gotta kill us TWICE!

Is +275 hp better than the defense rating enchant on the chest, or is it better to look to another slot enchant or gem slot for supplemental defense rating?
That's an interesting question.
I guess another good slot for defense would be the shield. A lot of people use 18 stam there, which is a BC enchant and under budget. So, if you had a 18 stam on the shield and a +22 defense on the chest, it would make sense to add the +275 on the chest and change it to +20 defense on the shield.
Either way, if you're under 540, the defense enchants will trump any health enchants, of course.
Personally, I use +275 on chest and +20 defense on shield...simply because I swap out items often for fun (using Thunderfury) or utility (Frost Resist on Sindr) and would like to stay above 540 def, no matter what.
