With specific regard to
Death Strike
, a deep Unholy build will get the same healing from it as a deep Blood build.
Blood gets 15% of their health back because of
Improved Death Strike
which turns the 10% from two disease into 15%.
Unholy gets 15% of their health back because
Ebon Plaguebringer
means they typically have three disease on the target.

That being said, Reaping is skipped because it doesn't matter for leveling. You will kill things before your second set of runes unless it's an Elite. Those Death Runes will be wasted on normal mobs. This is also the same reason I would skip Unholy Blight; it's not needed and won't even really get time to tick. Spend the point in UB in GF.
Even if you are AoE leveling, you'll be using BB instead of BS, which does not activate Reaping, so you're out of luck there too.
As for the Frost vs. Blood subspec, I would say that they're fairly close in so far as Black Ice vs. Bladed Armor.
I went Blood because of Butchery and BA providing me constant increases on my AP and RP when things die. This is the reason RPM from Frost is skipped: you'll be RP-dumping with either DC or CE while your Runes are on CD (and it will happen a great deal).
But that's not the only reason: Frost's Tier 1 talents force you to waste 3 points as filler, giving you less bang for your investment. Neither of Blood's T1 DPS talents is filler: both will help you kill faster.
Blood also offers Dark Conviction (yeah you get it late, but it's there) which offers better synergy with Unholy due to Wandering Plague, Unholy's scaling with crit and even the Subversion talent from Blood (which you've already specced to reach DC). And finally, should you decide you want a touch more survivability, Blood can grant you Rune Tap and Vendetta, something Frost cannot promise in the first four tiers outside of Toughness (more armor...yawn) or Lichborne (Fears/Charms/Sleeps being uncommon while leveling and even less of a concern for PvE).
Frost cannot add anything useful to you after T2 talents: you don't Obliterate so Annihilation is half-useless, your haste won't matter much until raids so IIT is nigh-worthless and you cannot grab FS or HB as deep Unholy so Killing Machine and Chill of the Grave lose 66% of their effectiveness if you spec into them. You shouldn't be DWing without ToT in very deep Frost, so Nerves of Cold Steel would be worthless too.
2HWS in Blood makes SS hit harder on the magic damage side of things. But it also makes white hits harder, BS and PS hit harder as well. I would do some math on BA vs. BI, but I don't know what numbers to expect for AP or Armor on leveling DKs (and it can vary widely from player to player).
As for Glyphs, I'd go Ghoul + Death and Decay, or if you're having Disease troubles while AoE leveling, DnD+Disease.
Your specs are solid, but you are missing out on a couple of key talents for UH:
--IUP is amazing: you will spend a lot of time on foot and unmounted so the time saved from IUP + Blood Presence will add up.
--Corpse Explosion adds another tool to your RP dump repertoire for AoEing and is highly, highly recommended. It's only drawback is that it cannot be used on some mob types. You specced for this in one talent build and not the other, but you Glyphed CE in both specs. I just wanted to clarify.
On a final note, thank you for doing your homework on the specs and not going all "hurf durf" on us. It is refreshing to see someone ask questions after putting some effort into them. This is a breath of fresh air on these Forums.
