I'm not entirely sure about the benefits engineering gives you as a holy pally, but my guess is that JC gives the most benefit there (since you generally stack Intellect as much as possible). If you're not using the JC-only gems, you're not making the most of the profession - period. The added stat bonuses
are
the benefit for JC. Spend the 5 tokens (2 for the pattern, 3 for the gems) and put some 34 Int gems into your gear.
Also, find yourself some meta gems or something that's still orange/yellow skillup and get yourself to 450. At that point, you can get the epic quality cuts, which you can also cut for yourself, and save yourself gold from AH markups or tips for getting them cut. Also, you can prospect Titanium Ore, which you can advertise in trade for some extra income.
My rogue is a JC, and I wouldn't think of dropping it for any profession at the moment. Saving up a few tokens is fine (in case you need to buy a new pattern), but sitting on 23 of them isn't doing you any good. JC takes a while to build itself up once you hit 450, but believe me when I say it's one of the best professions for just about every role of every class.
Also, if you're short on gems and you don't already have a DK at lvl 80, make one, take the 25-ish hours of played time to get yourself to 80, and then level herbalism and mining. Get gatherer, gatherer DB, and routes (three simple addons), load the DB into WoW, and make a route for all resources in WG. Whenever there isn't a battle going on, fly around WG with a macro that switches between the two tracking types. Collect - prospect the ore, and use the herbs to make stuff with alch. Profit.

I dropped a gathering skill a few years ago to try out Engineering. I was interested in the pvp purposes and gimmicky items. As goes with gimmicks, it was fun for a little while but turned out to be a huge waste of money. I'd forget to use the items in pvp and the novelty wore off of everything else. Obviously Engineering has changed since then so maybe it will be better for you. I do believe, however, that it's still the most expensive profession to level up.
It's all personal preference, as you mentioned. I would recommend sticking with what you have or, take up a gathering skill to compliment one of your crafting skills. That's what I went back to once I got tired of Engineering.

That is about the best stuff out of engineering obviously there is other stuff also but those are the things I enjoy from the profession.
Don't take advice from anyone that hasn't had engineering in years the profession has gotten a lot better.

you should never drop JC for any other prof!:) it's the only usefull at the moment in wow since the often upgrades of the gear and the unique gems JCers can use.i wish i had JC on any of my characters because i spent a lot of golds buying gems 3-4 times a month for every of my 5 80 lvl characters.just keep doing daily q buy as much as possible epic recipes.i have engineering on my hunter the only reason is that i wanted the best ammo ingame and since they cost expensive on my server to buy from ah i prefer to make them by my own.also i found usefull scrabots never worry about return on a capital while raiding to repair.but i droped skinning for engineering and i lvl up skinning on an alt.i have all the professions on my characters except JC because some friends of mine can craft me gems for a small fee(5g).

I just went simple and chose both, took a while to get the mats without mining but its worth it in the end ;)
