Hi,
i see a lot of Blood DK Tanking builds w/o Spell Deflection selected, anyone knows the reason? Seems like a pretty decent tanking talent to me.

I believe zetta is confusing acclimation with spell diflection which are two entirely different specs.
Spell deflection only works off direct dammage spells (not auras or debuffs and the like, think more along shadowbolt), which in naxxramas are pretty much non existant, but in ulduar are more frequent.
And in most blood tanking trees those 3 points are very free to put into either morbidity subversion and improved icy touch for the slow. If your the main in your raid and theres another class to slow attack speed spell deflection is a good place to dump 3 points.

Morbidity could be a decent choice for tanking trash events seeing as its a 30 second cooldown on a very powerful threat ability that is AoE, which as far as blood goes is limited to BB, so its not to be discredited unless you raid with another tank and you're the designated MT on most fights, for the record.
and puttting anything less than 3 into deflection seems to be a bigger waste than one or two seeing as you have 3 available points to spend and 15% damage off a spell is absolutely useless.

for Acclimation, at full stack you'll have 150 extra resist to that damage type, which translate to a minimum of 10% reduction on all damage of that type(AoE aura, raid-wide damage, single target) WITHOUT any extra resist buffs
On the other hand, Acclimation also require the specific damage to be constant in order to get the full benefit from it. Think like a firebal each 15sec. Then the chance of having 3 stacks of fire resist from Acclimation when you need it, to be slim.
On a fight like Hodir where frost damage is constant, specially through Frozen Blows, then it's WAY better then spell deflection. But for when the damage isn't constant, then i would value spell deflection higher then Acclimation.
Acclimation and Spell Deflection doesn't really serve the same purpose.
