All the Furious Gladiator gear that you get in Arenas will be the best. And that's every slot (if you can get high enough). You have to WoW Armory the best guys to get an idea for how they gear. It depends on many factors: your spec, your teammates, your talents. And of course whether you're gearing for Arenas or BG's or more general PvP. In Arenas, you'll be more dependent on resilience, so you'll need more gladiator gear. In BG's, you'll be mixing in more PvE gear for more total damage. I should mention that many mages over 2000 mix in at least a PvE 2-piece set for Arenas, too. It depends on how good you are and how intensive your party healing is to determine just how much PvE stuff you can get away with.
They did, however, just beef up some legs and a ring at Wintergrasp (to the point they're like as good as the Furious stuff...stupid). And you can buy plenty of Deadly and Hateful gladiator gear with just honor.

I should also say: by the time you're to the point that you're actually deciding whether or not you want to put a Furious piece of something in a slot or some badass PvE piece you scored, you won't need to ask us (nor would it be useful without all your specific information) how to gear. You'll understand your character, his strengths, his weaknesses, and know what you need to improve. Sometimes advice is helpful, though, even for the most advanced players.
Example: you've gone frost for your 3v3 team and so far, Enchanting has helped you slice through the easier teams because of it's all-around stat improvement. But once you hit 2100, suddenly the other team's gear and ability to mitigate damage has gotten better to the point that you hit a wall. You're out-DPSing your opponents but they always manage to evade your dps at the last moment, and survive your bursts. So you decide you need to switch to Engineering for the Wrist Rocket so that you can get that extra burst off, or the boots so you can chase down that squirrely Druid healer whose always creating distance when you set down for your frostbolts or arcblasts.
That kind of thing.
