The reason - spell mana using classes (mainly healers) were able to chain-chugging potions as soon as they were off cooldown, and with their powerful mana regeneration talents, their mana was virtually endless. The change was enforced, so healers can actually think about mana conservation.

2) make it so you can only use one of EACH potion per combat by this I mean blizz puts in sub-categroies or something to potions, thus in combat you can use one healing pot, mana pot,burn it! pot, and one guardian type pot.
This. Add sub-categories to potions, like elixirs.
Health/mana potions: Replenishment.
Indestructable/+ Spell damage-type potions: Enhancement.
Also, I'd like to have remove poison/disease to have a different cooldown too.

Sure, but that's TBC stuff, there are no WotLK upgrades of the stones. This would benefit only warriors, dk's, loladins and MAYBE ( with FAP scaling with weapon's damage not sure tho, never tested it) druids.. Rogues use poisons, shamans use imbues and there aten't many melee classes left.
the intention was to make classes that can apply temporary enhancements more unique

god i loved that game, played it for a long time before wow.
people think ret palas are OP..they obviously never played with a level 99 hammerdin...now thats OP
