Thanks all in advance for any help and "haha" to those whom are going to laugh at my expense.
I am here to see if I can get some help in improving my character:
http://www.wowarmory.com/character-sheet.xml?r=Zangarmarsh&n=Theodicus
http://profiler.wowhead.com/?profile=us.zangarmarsh.theodicus
(yes, I worked hard for a year - farming professions and obtaining gear thru some instances and buying off AH)
I have played WoW for more than a year now and I am trying to get more out of my Prot Paladin character before I start in on the 10/25 man raids. I have read most of the guides out there and have made changes through trial, error and gaming experience. Yet for some reason, I don't feel that my character has reached his potential at the current level. I'm afraid I am not completely ready for upper level raids.
As you can see by my WoW Armory sheet, I have some decent gear and set things in order to do somewhat good in instances and some PvP scenarois. What I would like is to know what more can I do for my character to be totaly prepared for MT and OT responsibilities for upper level raids?
How do I go about "not" making a fool out of myself during instances and raids and kick ass but not wipe doing it?
Is my current character setup good enough to finish off the instances I haven't completed and then move on to 10/25 man raids?
(Also, it is hard to find folks on servers to run instances and raids like pre-BC and BC level - so I hven't completed many of those yet. I have move from one server already trying to get stuff completed)
What am I doing wrong?

Do the 969 rotation and get 540 def min. Berserker is not a tanking trinket. Greatness can be, but you can find better with avoidance and stamina. Threat isnt an issue. Strength is great but youre not ret. You want stamina and avoidance. Block is nice for mitigation but you will get alot more from JC Stam jems.
You should be in at least Naxx10 right now even with that gemming.
Dont gem for dodge. Gem for defense if you cant gem for stam. Even past 540.

You're plenty geared enough to start raids. o_O In fact, you have more purples than a tank I went to Ulduar 10-man with.
The most important part gear-wise is obviously the defense cap, which you've met, though you did it through gems. I'm pretty sure you can easily meet the defense cap easily by obtaining gear in Heroics.

Successful tanking is measured easily, and only has two results -- success or failure. If you hold the mobs and no one gets hit by the big boss, you win.
Obviously that's simplified, but outside of that, just read up on the 969 rotation and read about some of the bosses and what your job will be.
You've obviously been told "Tanking is SOOO hard, you have to be SOOO good or else U FAIL GTFO" way too many times. Yes, it can be a challenge, but nowhere near as bad as you're making it out to be. As I mentioned above, I was with a tank in Ulduar10 that was in mostly blues as tanking was his second spec, and he did very well against the bosses we did.

Well...

Why in the world are you worried about pre-BC and BC content? Yes, it's fun to do, but certainly no reason to get a server transfer just because you can't find enough people to do TK by asking in Trade chat. :P Achievement Points are merely a measurement of one's E-Peen. Contrary to popular belief, a bigger E-Peen will NOT offer any sort of extra mitigation while tanking in Ulduar.

Cool suggestions.
But which should I go for?
More Stamina? Then my strength would be really weak. (nothing like living a long time and putting out really low damage)
More Agility? Again, strength is really weak.
Also; if I am going on raids, who would you recommend coming along aside from the no-brainer choices?
A tank is only as good as his team support. . . right?

Tanks are not DPS. Therefore, you shouldn't care about how hard you hit, but how much threat you're doing, and threat is pretty easy to get without ever gemming for Strength. More so in Ulduar, your job is to stay alive, and gemming for avoidance is the best way to do this.
As for raiders -- what do you mean by "no-brainer" choices? Really, it's hard to have a "bad" raid make-up. Obviously, a raid doesn't want to have more than two or so of any given class/spec, but outside of that, whoever.

change ur Trinkets
avoidance
and
stamina
, don't gem STR u r a tank u don't need to do DPS u need to do Threat!, so gem ur self: blue= 24stam yellow= 8def+12stam red= 8dodge+12stam.
enchants - take enchant that will help u tanking meaning stam, def, or avoidance.
after u will do those u can tank with no much problem naxx 10/25.

I lol'd
I suggest you get two sets of gear. One for epeenery, and one for actual tanking. The actual tanking set will have tons of mitigation and stam while staying at 102.4.
