For PvP I'm pretty enamored of my Ravager. There is nothing funnier than a Rogue who Cheap Shots me only to be knocked down by
Ravage
; that puts 'em several combo points behind for their Kidney Shot meaning I can usually skip trinketing out before I can Scatter Shot to get away.
Plus, ravagers can act as a second interrupt on casters. I find overall that's more useful than relying on a crab's
Pin
to get away from melee.

I've seen Crabs, Cats, and Ravagers used for PvP.
Considering Crab is Tenacity and its Roar of Sacrifice prevents a good amount of damage the hunter takes...it might be the most practical pet.
Of course...Ravager can also get Roar of Sacrifice...

Crab has a little more survivability than a Spider, while spider can work as a mana battery.
Spider's root is also ranged, so might help a bit.
The extra heal on the pet is pretty useful... Some Ret paladin once decided that he would kill my pet then start attacking me... too bad for him, my healer noticed that and was able to keep the pet alive with no trouble at all (+40% heal helps a lot).
I use crab mostly because I'm too lazy to level up a Spider.

As argg0 said crab or spider - any pet that is going to trap the target is going to prove useful in pvp esp. when fighting melee classes. I have a spider on my hunter and I use my hunter almost exclusively for pvp.

Look at more than just "I need to kite melee" when looking at your pet. What is your group setup? Yes, groups can change over time, but chances are you're going to want to get a pet that complements your group, as pets are fairly easy to swap out.
For example, right now I'm levelling my hunter, but I'm going to do 3's with a frost DK and either a ret or a prot/heals paladin. The group I'm in has PLENTY of snares already (conc shot, wing clip, frost trap, and all the frost DK goodies) so I really don't need another. Also, stuns - while good - might end up getting nullified by diminishing returns by a protadin. So I am instead going with a gorilla, which has an interrupt. Interrupts aren't on the DR (I think) and we only have one in our 3s who can interrupt (paladin cant), meaning its going to be a bit more useful than other abilities.
