Do all of them if you're 70 to 80.
I did this on my Alliance warlock back at level 70 in like 21 hours or something. Never stopped to eat/drink...long haul but worth it.
Pick up quests...move to the area where the meat drops...kill, kill, kill...move onto the furbie one in the camp....run out of mobs..head south and take out the elites...come back to the camp..bam..respawns...kill 'em...go turn in or grab meat guys on the way back. Rinse/repeat.
Don't stand around. If there's nothing there...move to another area...then come back on your way back.

i just got my frostsaber actually a couple days ago and i truly think a lot of this is
personal preference + your server.
after opening up the 3 quests, i only repeated killing the furbolgs and gathering provisions. the -only- time i went down to complete the third quest and kill the elite giants was if i ran into other people farming the furbolgs and/or no shamans were spawned.
make sure you kill the denwatchers and ursas inside the village, almost all of them can respawn as shamans. learn where they can be. there a few on top of the hill inside and one patrolling outside the village. it will save u down time to come back to a bunch of shamans ready for killing ^_~
i highly recommend reading the comments section under the mount's name. all of this info and what others above me have provided can be found there.
servers with more people farming the village tend to have people doing the rampaging giants quest, whereas my server is not as busy and thus it was more beneficial to just run back and forth doing the other two quests.

When the new faction change hits, if you have this mount and switch to Horde, do you think it will transfer with you?

I have done this rep grind more times than probably anyone on these forums (i have got the frostsaber on 16 characters :P

I'm halfway through Honored and I've been doing all 3 quests per loop. I'm a druid - started at level 58 and I'm currently 61. The elite giants are sort of a PITA but the extra 100 rep per turn-in is worth it, plus I'm getting ~1350 XP per kill while rested so I'm leveling quick. It's taking me longer, I think, because of the meat quest, and the giants are slow kills for me, but still plugging away at it. I'm at 51 turns-in so far. I will get there eventually... *sigh*

Most likely converted to the Ravasaur mount, as mentioned above.
I'm sure the whole faction change thing will have alot of mirroring, that converts - for instance - Dwarf Rams to Orchish Wolves, so that basically, every mount (and item, for that matter) has it's opposite on the other faction. Same applies to Achievements and faction based items, etc. ... We'll see how it turns out.
