I'm considering dropping Inscription...

Here comes the dilemma.
I'm a plans collector and a completionist. What I like in the professions are both the amount of useful crafts and the utility it brings to the character. Inscription brings the excellent Master's inscriptions, but I think that's about it. As for the "useful crafts" I can make with Inscription, I find them dull. Plain glyphs that almost nobody buys because everyone has their set already. I don't feel in demand, almost nobody seeks me out to ask me to make a glyph.
Blacksmithing will give me two additional sockets instead of the shoulders inscription. I don't know if it's really worth it. It will also give me a whole lot of plans most of which aren't useful anymore but some are in constant demand.
Alchemy will give me a small boost if I drink an elixir or flask I can make. Compared to Inscription it's clearly not worth it, but it will also provide me with tons of amusing and useful recipes, some of which are still used at level 80 even though they are level 15-20 recipes, unlike Blacksmithing.
So I'm stuck here with a choice... To keep Inscription or to take a new profession?
Inscription - Great bonus to character - Not entertaining
Blacksmithing - Average bonus to character - Average entertainment
Alchemy - Low bonus to character - Very entertaining
What would you do? Maybe you see something about these professions that I missed, or can recommend another one?

That would be stupid to do that.
Here are advantage:
1) You do not need to farm reputation with Sons of Hodir
2) You do not have to pay 80g every time you get new shoulders
3) Minor glyphs still sell for alot
4) Major glyphs still sell because there is new lvl 80 every day
5) Vellum sell for good
6) You have 1-2 extra heartstone per 30mins

The problem is that I'm not really the commercial type of guy. I plain suck at making gold via AH and would rather be useful to other people than be rich. In addition, Auctioneer doesn't work for some weird reason :-( I tried hard making and selling the most in demand glyphs but couldn't manage to make more than 100-200 gold per day with that method.
My second profession is jewelcrafting, which I like a lot, and I have an enchanter alt.

You said alchemy is most entertaining.
Therefore I recommend alchemy.
Personally I'm jewelcrafter/inscriptionist on one toon (new server)
And on my regular server, I have blacksmith/miner, enchanter/skinner, and herbalist/alchemist.
I don't like alchemy because it takes 3 days to discover a new flask. The 3 days isn't something that works the way I play. I need quick results, inscriptionist with 1 day of turn-around time for a discovery is fine, because it's not my main toon, and I can hop on him once a day, get myself a discovery and be happy.
With alchemist I dont' remember when 3 days are up, not to mention the flask that I need for raiding is a learned flask, so I don't need to discover anything.
To make money on inscription, I believe you pretty much have to make glyphs and list them on AH. You could make cards, but I never got into that. With Blacksmithing, you are more likely to get requests from people to make something. But you can easily sell 20 glyphs a day by listing a 100 or so on AH (some sell, some don't). It's a constant underbidding war, so if you like it, it's fun, but if you don't, it's not.
Anyway, go for alchemy, since you think it's fun. I know I enjoy when flasks proc.

. JC's cut epic gems, tailors & BS make epic gear, engineers make epic mounts, alchs can transmute for epic gems & have the flasks (albeit flasks are not sparkly purple epic color items) etc......

Your server != facts
If your server has its glyph economy scrap, not the case for the rest of us.
Also, vellum always sell good.

It is very server dependent.
There are a good 20-30 glyphs that sell consistently for 20-50g each on my server, I sell out of them in 2 days or so and refresh.
Remember to price in 12 hour intervals, it allows you to keep the lowest prices.
I also recommend advertising to make Darkmoon cards for tips- I tell someone to bring me 6 stacks of NR herbs, and I mill them and make a card attempt for around a 20-30g tip. Most people will pay around 100 extra tip for a good Nobles card.
