Well Mr. the Mighty, it's all a matter of preference. Trying to balance mitigation, avoidance, and health has been a concern of tanks since the game came out.
If you've got that many options as far as gear goes, then maybe you should keep multiple pieces of armor handy for different situations.
For fights like Malygos, for example, you'd want lots of health to reduce the impact of
Arcane Breath, since his melee attacks aren't a real concern.
I'm not familiar with bosses in Ulduar, though, but I would think the same scenarios would apply.
I do have a question for you, though. Why would dodge affect your decision to dual wield? Because of the increased chance to be parried, wouldn't expertise govern that decision? I'm not entirely familair with the 2h/dual-wield debate for death knight tanks.
