Sounds similar to me.
I play with my girlfriend and she plays a hunter for the same reason as your wife :p
I guess try not to overthink things. Just treat your hunter as a side project and don't worry about him being the absolute best. You should play the hunter with your wife's fun in mind, rather than needing to finish everything or have the best in slot gear at all times or whatever it may be.
And when she's not logged in, you can go into hardcore mode and do everything on your priest.

Yeah. i know what your talking about.
But seriously, and i dont know you, but it sounds like it's really not the game... it's more of your "have to win" attitude... and i understand that as well.
Funny thing about wow... there IS no win. there is No winner. People assume that getting a worlds first something makes you a winner... winning at 2v2 3v3 5v5, havign BiS and running all the content... it's just not so...
I would recomend that you look at it from a differnt angle... not as a player, but as a helper to your wife. Don't "Play" the game, act like your building and strengthning your relationship - and some of that time is spent playing wow with your wife (congratz, btw).
Its really just an issue of perspective. I wish you luck.
