Lets see. I am NOT a warrior and don't know much about that; I'll answer what i am fairily certain.
1) Point by point, never. Resilience reduces not one, but 3 sources of damage: Crit chance, Crit damage and DoT damage (all damage in 3.2). So no, defense won't get you the same results. specially because you'll face spellcasters, against which defense is useless.
2) That is because tank gear is nonexistant in pvp. You could, i guess, have a mix. Also, most pvp protection vids are in battlegrounds: people tend to be facing undergeared people, unskilled people, unbalanced levels of gear, and therefore, the one they choose is not as important. Not much more i can say here without knowing the class basis better.
3) Please correct. I am under the impression that protection pvp warriors have a tendancy of starvation for rage? if so, deep wounds could mean it isn't needed to Rend to keep a stealther from stealthing, while maintaining rage.
4)I'll leave this to warriors.
5) If i am correct, that was a bug, once in its time. I've seen swifty (a very well known warrior) critically hit for 41000 damage.
6) Ahm... i'll pass this one too ;)

In PvP videos, they usually have a fair amount of resil thru off set items, and have some PvE set pieces, shield, weap, and trinkets. They only use PvE gear for SBV.

Prot warriors use PvE gear for shield block value. Otherwise they are wearing a fair bit of resilence gear. A prot warrior needs to stack block in order to deal higher shield slam crits and reduce incoming damage.
Also be sure to take a slow 1 hander weapon, for higher devastate hits.

I'm assuming the OP is referring to PvP at level 80, of which I can't confess to know much. But having built and extensively used at PvP dedicated Prot Warrior at 60, 69, and 70, I can say that done right, for Battlegrounds, it's a winning spec. I was frequently at the top of the board for damage, KB's, HK's, and sub mission stats (flags caps, tower defends, etc etc).
I am now level 74, still Prot Specced, and regularly playing SotA, where I'm comfortably beating 78's (maybe not the best players in the world, but I'm beating them), and doing Wintergrasp a few times a day. Sure, there, where EVERYONE is 80, I'm getting my ass ganked unless I'm part of a bigger group, but when I farm Titanium outside of the active battles, and bump into an 80, I comfortably win maybe 20% of fights.
Basically, Prot rocks for Survivability, especially if you have a healer anywhere near you, and the damage potential is pretty immense when you stack huge amounts of strength. Take a fast one hander and you won't struggle for Rage either.

6. I don't claim to have any in-depth knowledge on Warrior mechanics, only limited to a few. Ice Block Bladestorm, Blink Intercept, and stay in between 5 and 8 yards.

Yes and no. Any Prot Warrior Shield Slam mechanics would suffer from the same BV cap that Prot Paladins are struggling to get their heads around.
Prot PvP isn't just about huge shield crits. The nature of it by definition is to wear down and hamper offensive efforts, either by distracting a number of opponents at a time, holding a location and preventing flag capping, or otherwise.
We've got a minor debate over on the Pally forums about the use of stacking BV in PvP for bigger crits. While it makes you more powerful in the shorter term (through the use of BV trinkets and the like), it gimps your utility and your overall damage level. Much better as a Prot PvP player to boost your overall damage. For you Warriors, it might still be useful, but very situational, as you'll need big armor reductions to see the big crits you want.
