Range Classes and what are raids really like?

I'm probably thinking of coming back to WoW although I'm not really certain to myself what class to play as, I usually prefer range classes because you can attack from a long range of course and melee is messy for me however I'm not too sure now what to be so here is a brief summery of what I think of each range class and for some specs.
Mage: A good burst range damage dealer, Arcane or Fire spec for the best damage but mana management is bad, leveling wise other people force other Mages to be Frost buy maybe for reason like for it's snaring and it's mandatory for pvp but damage wise it's bad.
Balance Druid: Being someone who has played a Balance Druid, it's great but there's one problem...you end up looking like a big fat chicken, I'm sorry but Moonkins have been the subject of rude jokes for years. I've heard that Druids are getting new designs for Bear and Cat form, but nothing new to make Moonkins look better and perhaps make them...less fat.
Shaman: Quite similar to the Druid in some places, biggest downfall of this class are the totems. Thankfully in the next patch that is 3.2 Shamans will get a new totem bar that allows them to drop all their totems at once. Ok, that's fine but you still lose mana for dropping them down, and for best results you have to be stationary and they only last like 2-5 minutes. I would prefer castable buffs than totems.
Hunter: A range damage dealer that quite fun to play, in the past we had to feed the pet but now thanks to a certain minor Hunter glyph you don't have to feed your pet again. =) Sure the pet can do this odd run with mob while attacking which is something that's been there since day one but the pet isn't the main problem I have with Hunters, it's ammo. At higher levels it becomes expensive and you can unexpectedly run out of ammo all the time even if you just restocked on ammo it depletes too quickly and at higher levels people expect you to have the highest possible damage and often as I read it maybe quite a long time just to farm for the gold for the better ammo. So if you run out of ammo, then you become pretty much useless. =(
Warlock: Similar to Mage but with demon minion. As far as I can say, just spamming all your DoTs is like waiting for paint to dry, not very fun so I like direct damage and for that Warlocks have Destruction spec. But why do I get the feeling that Destruction is like playing a Fire Mage?
Also you have to decide well what demon minion you want so you don't use up your Soulshards (with the exception of Imp) although it can be troublesome to know which to use, Imp and Fel Hunter both have good buffs, Fel Hunter has Intellect & Spirit buff that doesn't stack so useful if there is no Mage &/or Priest, Voidwalker is a tank, Succubus is a damage dealer and Felguard is both of the latter if your into Demonology. But what minion is better if your not a Demon spec, more Stamina? more Intellect & Spirit? a tank or a high damage dealer?
Shadow Priest: Finally the Shadow Priest, seems like Blizzard has not put much effect with this spec, comparing with other classes, they haven't been scaled correctly in terms of damage and survival, I suppose that's because the Priest is meant to be more of a healer but that doesn't explain why Moonkins can do more damage than them since Druids are healers as well. I think I've said enough about these.
Sorry for the long wall of text, the other thing is I want to ask are raids, being someone who hasn't really got to the end game stuff, how difficult are they? How long does it take to get the full gear? Are the bosses impossible to beat for new comers like myself? How do you know your ready for a higher raid? Would I be unable to gear up from Naxx due it being an old instance anyway and everyone prefering to do Ulduar? If a new comer and Icecrown Citadel is released, will it take forever to finally be ready or will it be too late for me anyway as Blizzard brings out the next expansion?

Mage: requires 1700 sp with 14% of hit rate (according to the yelling I got from fellow forum poster in mage section of wowhead)
The good spec which works for me in naxxramas 10 men raid is arcane fire, but I heared that frost fire duel wielding spec also improves your frost fire spell and it is better then arcane fire duel wielding spec rotation.
I have started up with arcane fire, for naxxramas 10 men raid and it is doing well for me so far.

I play a mage and it's frustrating how fragile and mana-dependent they are. If you can handle their vulnerability and manage their mana, then a mage is right for you.
I'd much more recommend making a hunter for you, though. I don't play one, but given how much more durable and how troublesome they are to fight, I think you'd do better as one. They do decent damage, are much less reliant on mana, wear heavier armor, can take more damage than mages, and have a ton of options for escaping trouble.
I love shamans, but I'm not sure how the Elemental Combat tree is supposed to work.
Don't worry about how long it'll take to get there. I suggest you just focus on playing your new toon and don't get distracted by playing another toon or doing stuff that's below your level. Keep moving forward. Otherwise, have fun. It won't take long. It'll still be awhile before even Patch 3.2.

Well Elemental Combat seems fine for Shaman, totems though I'm not sure still.
As for Hunter, ammo is the great concern for me, too much of it is expensive, too little of it will make you run out.
& finally I'm almost back, just need the toon.

I have a mage and a hunter and I can say I much like the hunter better due to it's survivability. I can take a few hits and it's a lot easier for me to regen mana than my mage, but it's possible I am not playing my mage the best way.
Saronite Razorheads
can be expensive, but since the ammo stacks to 1000 now it is a lot less likely that you will run out.
All I can say is find something that you enjoy playing and go with it from there.

You could be largely over-geared or the rest can't really play very well.
Shadow priests are far from the best DPS single target.

Well lets put it another way, some classes are solo a single elite of the same level quite well, Paladins can do it, Hunters can kite anything, Warlocks can send minion, Druids can solo them as well. Mage and Priest however can't solo elites and Priest comes out worse because they can't slow the elite down to kite.

Simcraft doesn't take into account player skill, movement, latency, etc.Yes it does :
- skill : it assumes everyone is playing perfectly. You can't really play better than the TC modelling (unless it's a stupid model), you can however outperform it thanks to luck on crits/procs/...
- latency : is integrated in the models
- movement : does make the assumption that nobody has to move out of fire
Order can change when people have to move (though a number of assumptions could be made to cover that), and when the others are playing badly, but simcraft and more generally TC IS a good way to see a specs potential.
Moonkins can hold their own, but not much past 4k pre-Uld.5k7 as my personal record and several 6k combatlogs from others beg to differ with you, as far as stand and nuke goes on Patchwerk with only T7 content gear (on fights lasting 3mins+). Over 5k on more normal bosses isn't difficult either.
