The skill gap is far too large to have new players come down and join in (although that is why it is fun, because skill and teamwork is so rewarding). Part of what makes FPS games so great for LANing is that by their nature they are simple - you point at enemies and shoot them. Sure, there are layers of complexity over that, but they aren't nearly as complex as other games - if you remove the BR/Carbine from Halo 3, you would have trouble noticing much of a skill gap at all.
As for racing games, sadly the Wii lacks the ability to set up for LANing, so you can only play 4 people together on the Wii, which is fun, but doesn't really work for having a large amount of players.
Don't even mention sports games though. I've played some of them, and it is hard for me to even consider them real video games.

I realize that you admitted as such, but that still doesn't make make reducing a game to its plot any better.
What makes Mass Effect unique is that it is one of the few games that combined a true rpg and a third person shooter system. It's a shift towards making rpgs less of a "geeky" thing, catching it up with the fast paced games that most gamers play.
Dragon Age, on the other hand, is not unique. The entire game (not just a plot) is a purposeful revival of the isometric rpg era, just updated to fit modern expectations.

Actually, the reason I was looking at the plots was because of what I was responding to:Mass Effect and DA:O have
unique plots
. Alpha Protocol has a
unique plot
as well.

And, of course, I went on to explain that being unique does not make a game good, nor does being generic/derivative make it bad.
Honestly, I'm not going to make a judgment on game play until I've played it myself, since it's often true that a game is much more fun to play than it sounds.I like the games and the plots they have and that is all that should really matter.

Why people play FPS is another question...
There is so much truth in this it's not even funny. All FPS are the exact same thing. Kill guys with one gun till you "Rank up" get a new gun, rinse and repeat 100 times. Occasionally throw a grenade. I always get bored by FPS by at least 2 days. They are way too repetitive and I would like to see one that is not just the "Kill X a ton rinse repeat" mantra.
You just listed some aspects of some shooters. The only thing that makes a shooter a shooter...is the the shooting.
I could do the exact same thing for every single genre:
Every rts is just managing your resources as efficiently as possible until they're greater than your opponent's.
Every rpg is using abilities repeatedly to gain more advanced abilities.
Every racing game is racing.
Every adventure game is using various information and items in a specific way.
Etc.
Etc.
