The orc racials are currently better for pretty much any purpose, especially in PvE. But racials are getting a revamp soon, and the difference is not huge to begin with. So I'd say go with what you think looks better, feels cooler etc.

I personally would pick Orc Warrior because of the awesome fighting animations, football shoulders and the really neat way they run. Undead seem to scrawny for me but it's your character, make whichever one you could see yourself looking at. There's always race change if it isn't what you wanted.

Don't pick for racials, Cata will be changing them.
We've already seen the Worgen and Goblin racials, and they aren't too far out of line of current ones for PvE or PvP (1% damage or 1% haste).
What
has
changed are the racials like skinning: Worgen can skin faster than other races. Based on that evidence it's racials like that (herbalism for Tauren, Engineering for Gnomes, etc.) that are likely to change.
5% health for Taurens will likely still be there after Cata, albeit in a slightly changed form perhaps. But for Effective Health Tauren tanks will still rule.
Oh yeah, for the OP: Female undead animations are wicked and mean looking, female undead warriors FTW!
