Did this in Bastion at Nemea's Retreat. There are 9 larion cubs in the area that can be pet. When 5 out of 9 of them are pet at the same time then Courage spawns next to Nemea. Simply right click Courage to have the pet added to your journal.

Edit: After more research, only 5 of the 9 cubs need to be pet at the same time!Aevintiri
