I've been Skinning/LW since day one and find them to be great proffs. LW used to be a bit lacking for end game, but with the bracer enchant it's become quite viable for both PvE and PvP.
I've always liked it for the fact that I can craft very decent armor while I'm leveling, plus make some pretty decent pre-raid pieces come end game. In WotLK, it was pretty nice being able to craft my own BG set. Although it's not the best money maker, it sure is nice being able to apply leg kits and bracer enchants at a fraction of the mats cost.
I'm still hoping they introduce some more LW only buffs and bring drums back as well. :D
I say go with what you like though. All the professions have their good qualities and some may provide slightly better buffs for certain situations, but the gap is shrinking.

I would consider dropping leatherworking for herbalism or mining at your level. Pretty much anything you can make while leveling can be bought off of the AH.
As for the professions use at 80, leatherworking provides you with an extra 64 AP. Thats it. While I believe that is benefical to BM hunters and a wash for MM hunters, Survival hunters would prefer agility, which requires jewelcrafting, blacksmithing, or alchemy (listed in order of usefulness) to get as a profession bonus.

Same here...I debated ditching leatherworking, but am very glad that I didn't. I am really looking forward to when I can get
Fur Lining--AP
for my bracers,
Nerubian Leg Reinforcements
for my legs, and
Heavy Borean Armor Kits
for my shoulders, head, chest, boots, and gloves.
I mean, while anyone can use the +stam kits, you get the leg patches relatively early and for a fraction of the cost, and 114 AP to bracers is nothing to turn your nose up at. All totaled, those are +189 AP, +54 crit rating (assuming your skinning is maxxed for the +32 crit rating), and +540 stamina (5400 hp...kind of a lot...).
Totally worth it in my opinion. The armor kits will help you make bank also, which is always useful when trying to get together the gold for those pesky flying ounts =)
