I usually prefer Rogue & Mage PvP videos... they're the ones with the most skills to avoid death, so its a very edge of your seat experience.
Add Unbreakable (old level 60 Shaman videos) to the list, and I'm good to go.

I prefer raid videos that switch the point of view often.
The Paragon videos are pretty awesome in that regard, seeing how the fight looks from several perspectives is perfect.
PvE videos are only interesting if "serious" raid content is beaten. A commentary is also nice, a 10 minute bossfight with only music gets boring really fast.
PvP videos are easier to make and are pretty much always interesting but almost never great. If you play arena with a very high rating a commentary to arena videos would also be nice. Classes don't really matter that much I think, everyone has a different favorite (the one he himself plays as a main) so you can't really go by that. Just pick whatever you like / whatever you have a high rating with.
In case you can neither do raid hard modes nor highly rated PvP you can still of course shoot some world PvP fun. As I said, still interesting - but not great.

If it were me i'd make sure to avoid a couple of things
- PvP video's of Huge crit numbers - it is neither original nor entertaining
- Really loud music - by 'loud' I mean heavy stuff, often coupled with unintelligable screaming - it's fine that some people (lots do) have that taste in music, but remember that you will immediately irritate some people, not something you wanna do if you want to appeal to lots of people (if that is your goal) - (the music should fit your video)
- Be exceptional - people remember those who stand out - who are special, not those who are run-of-the-mill - so practise, and fine-tune, then practise again (though no-one is expecting perfection, seeing it gives an extra "wow" factor
- Be creative, in editing, in music choice, in your pic of clips, your voice-over etc.
- Take criticism, don't expect your first video to be rated 10/10, or even 7/10 - you will get better as you make more of them if you learn from your mistakes (which people will be more than willing to point out)
- Be polite - sounds simple, but voice-overs of a constant stream of obscenities is a nono (also try not to be arrogant)
- Be personal - try not to be a generic movie-maker, include something which makes your vids stand out, whether it be a story-line, or a trademark of some sort (this could be as general as your style) - if you are going to try and get a following, this will help people recognise and remember you.
