Leatherworking is - by far - your best choice :)

yea i had some people tell me blacksmithing, but i thought i'd ask around and see what must people say.
Well, Blacksmithing can be used for making mail up till around level 40, and after that, pretty much only plate. Highlevel recipes only include plate and melee-weapons etc.
Leatherworking (Dragonscale) however, contains a nice BoP epic set (
belt
,
bracers
and
chest
) suited for Enhancement Shamans and Hunters. In addition, all highlevel mail recipes are from Leatherworking.
Also, there's the cheaper Felstalker set (
belt
,
bracers
and
chest
).

Ah yes, CluckChicken, I forgot those :)
Armorsmithing might be a good alternative, but in the long run, I'd still recommend going LW. You'll generally get more different armor-pieces, and many more options from later Patterns.

- Engineering
If this is your only character you should take mining / engineering. As a miner engineer you will be able to self supply adamantite bullets/arrows from level 62, which, at +43 damage, are the best ammo that you can reasonably expect to attain.
You will also get a fantastic T5 equivalent helm that requires only one primal nether.
Now, the bullets are not BoP so you can buy them from the AH. I think
- Blacksmithing
Leave it the hell alone. While blacksmithing has a few good mail recipes, the operative word is "few". The recipes are tuff to get for the most part, and, critically, the items are not BoP. i.e. take another profession and help validate some blacksmiths profession choice by buying interesting mail items.
- Leatherworking
Leatherworking, past skill level 200, makes mail - because both hunters and shamen switch from leather to mail at 40, the leatherworking skill gets an increasing number of hunter / shaman mail recipes based on some kind of monster scale.

is the list of reasons you might choose leatherworking. These are the bind-on-pickup mail items. Everything else you can buy from a leatherworker for far far far less than you paid to level the skill and grind the necessary rep or gold to obtain the recipe.
The ebon netherscale set - available from a trainer as part of your dragonscale specialization - is probably what you are looking for. It looks nice, but I dont see it meantioned with the same awe that the tailoring frozen shadoweave set is meantioned.
