I'd say Paladin and Hunter. Both rock with full looms. Mind you, you didn't define 'fun', so I've assumed 'fun' means getting to cap as quickly and painlessly as possible.
Well, "fun" is subjective. What's fun for me might not be fun for someone else.
In this case, I define "fun" to be mowing through mobs as quickly as humanly possible.
When I first made my warrior, he was one-shotting mobs with victory rush up into his late teens/20s. Having a double crusader proc at level 10 is...fun, to say the least =P
Now he's level 66 and dual-specced fury/prot. One of my buddies I level with is a healer, so he and I will queue together. I've been able to dps tank pretty much every outland instance so far with him as my healer. Eventually I'll have to use my prot spec, but most likely not until Northrend. Though I will whip out my prot spec and do mass pulls if we're in a hurry.
But yeah, everybody's version of "fun" is different. I just really enjoy being a juggernaut of death and destruction wielding two of
these with full crit gems. My crit was up to 25% at one point (bad for endgame, not bad for level 60). Not to mention it looks awesome. I do have two BoA swords, though, which I'll have to start using again soon, as their dps is approaching that of my 2h maces lol.
I'd say warrior. Although my warlock was also really fun to level.
I am working on a mage alt right now, but I plan on doing a warlock and priest, as well. Leveling a priest dual-specced holy/disc and leveling strictly through dungeons/bgs was a lot of fun...and that was with just shoulder, chest, and weapon heirlooms. He's never, EVER going to die in bgs now that I have the legs, head, and cloak as well. I expect all three clothies to be a lot of fun.
Elemental Shaman.
I am currently levleing another Shaman and it is going really fast and is tons of fun. Insane DPS, little to no down time.
I can't bring myself to make my shaman elemental. I like enhancement too much =(

personally i loved it in cata too level a disc priest with
Smite spam healing.
but it seems in MoP you only get
Atonement at lvl 38 which is quite a lot later. though i could keep up healing like this pretty much till the cata dungeons.
being tops dps often and no one dieing during it, was the best :D
