You absolutely don't need to do PvP to progress in end-game. World of Warcraft's end-game content is more revolving around PvE then PvP anyway. Although Blizzard has made efforts (and is still continuing to do so) to make end-game PvP as viable as PvE. Which is a good thing since I personally enjoy both. But if you just want to PvE you can absolutely do that without ever going into the PvP side of things and vice versa.
With that said, there is A LOT of end-game PvE content ahead of you at level 70. 5-man dungeons, 5-man heroic dungeons, 10-man raids, 25-man raids, world bosses, ...

PvP end game and PvE end game are completely separated pieces of the gameplay, you can absolutely do one without touching the other. However, due to that quality of some items available through each PvE/Pvp rewards, doing a bit of the other one can ease progression into the first one.
Regarding PvE content :
- tons of fun and interresting (lorewise, if you're into that) quests in most zones for levelling or getting item rewards
- seasonnal content
- reputations and factions
- crafts
- 13 5 man instances (4 for level 70) and their heroic counterparts (all for level 70)
- 2 10 man raids (karazhan and Zul Aman)
- 6 25 man raids (Gruul's lair, magtheridon, SSC, TK, MH, BT)
And a new 5 man instance + 25 man raid coming with patch 2.4.
That's a lot to do and go through, especially since raids can take quite some time to beat depending on what type of guild you are in.

I'm not even really close to there yet..but I have a question..when you hit Lvl 70 and you've completed all the quests....what's next?...what's the point?...I'm a noob so maybe it's something I would understand eventually...but to me I would think the fun of it is building your character up..once they've maxed then what do you do then?
I doubt if even most 70's have completed ALL the quests. Even completing all the quests available for your class probably doesn't happen too often. ;)

Agreed. You can hit 70 without even
going
to 3 zones in Outlands. After 70 the quests give even more gold, so they're still worth doing.
Aside from raiding and PvPing, there are some really nice quest chains in Shadowmoon Valley, Blade's Edge, and Netherstorm that are really interesting if you actually read them. :)
