(Note - this is strictly for a leveling lock - crafting professions can be profitable at high levels. Thus, you are better off taking money-making professions at the start, then powerleveling your crafting professions at 40 (enchanting) or 70 (just about anything else) with deep pockets to get all the mats you might want.)

I had mining and skinning while I leveled, It helped me get gold and afford my epic mount as well as other stuff. I think trying to have a crafting profession while leveling is too much of a money sink.
After I hit 70 I dropped skinning and took up enchanting. It was way easier to level then, plus I had saved up greens and blues I had gotten on the way leveling to 70, gave them to a bank alt to hold on to so when I hit 70 i had a bunch of stuff I could de to get mats. Plus as 70 is was much easier to farm mats and do instance runs for recipes.

tailoring isnt too bad as a money sink, you get cloth while leveling and most cloth doesnt sell for much anyways. Usually players go with a gathering/crafting profession where they use all of the materials they gather and never sell anything, but tailoring can be combined with another gathering profession used to make money.
It's also far cheaper in the mid to late levels to make your own gear via tailoring than it is to buy it from others over the auction house. 15-20 gold for a dreamweave vest when you can make it for less than half the price sounds pretty good to me.
True, if your really ambitious you can couple tailoring and enchanting together. you use tailoring to make gear to level it and then you de it to get enchanting mats to use or sell off

No, not exaggerating for the simple reason that this thread is about professions to LEVEL with. I explicitly pointed out that each of those can be profitable at the highest levels.
Enchanting generally starts to turn a profit when you're able to disenchant dropped items into nether essences for the twink enchant market. This is around 40th level.
Blacksmithing and jewelcrafting both require massive quantities of ore to level and often rare patterns to turn a steady profit. The low level items you can make will be of less value than the ore you make them with. You will simply make more money by selling the ore in the first place as you level, then consider changing to the crafting profession when you have a healthy bank account and don't want to run around whacking at nodes all the time.
