There are some great quest/dungeon gear guides, such as Page 4 of Yakra's sticky at the top of the forums.
Your stamina is fairly low. You should try to attain 11-12k HP unbuffed for the first few bosses of Karazhan. Some of the easier Heroics, with CC, are definitely possible as well -- just be careful.
Gems - you're going about them in the wrong way. While you may need to use some +defense gems right now (do you really?), you should eliminate them A.S.A.P. Get rid of anything that isn't +defense or +stamina gems/enchants right away. Forget the socket bonuses, they aren't helping as much as hurting.
It's a neverending process, so keep working at it & things will get easier as you go along. Get all of your Heroic Keys, get exalted with factions like Keepers of Time & Sha'tar. If you have a few spare Honor Points, you could upgrade your shield with the Season 1 arena shield, a big boon for you at this point.
When you're ready for Heroics, you'll know it & it will show not only as much in your gear, but you'll
feel
it, too. Good luck in your endeavours!

Keep in mind, the original poster (OP) did not mention whether he was off tanking or main tanking Karazhan (in the future). That said, it is obvious one would not need as strict gear requirements for
off tanking
.
For a guild who is not progressed & puts this player at the helm for Karazhan, even the first four bosses, will have a hard time. Attumen is a gear check & the encounter is, as far as I can remember, based around 11,000 HP. To take less than that for a main tank in a progressing guild would be folly.
The real question is this: "Why should said player stop gear changes & progressing him- or herself just because he/she meets 'basic' guidelines/requirements?" Tanking itself is done in a progressive fashion &
anyone who settles for less has clearly not progressed
