I go for the rule that all go to stamina unless the socket bonus is usefull where i will use +agi gems or +expertise/stam or +def/stam in yellow ones

as a feral tank i only ever use stam and agi purple gems for my red and blue sockets, i have never socketed a pure stam gem, and don't plan on it any time soon. my yellow gems were usually a green or orange gem that gave you the most stam + HR/Exp/dodge/w/e else is on there, i don't even remember =/
