Ironically I tried switching from Shadow to Disc/Holy at 61 and had to switch back immediately. I didn't like how much slower my killing was. Admittedly I was a lot harder to kill but it seemed like it was taking 50% longer to kill things, my shield was running out faster and I was always taking 2500 to 3000 mana to kill something (as opposed to around 1200 with shadow). I think I was using this spec exactly

Admittedly, I'm still pretty much a noob and probably didn't give myself a chance to l2p the spec right. I also have a new 80+ dps wand vs the 60 dps one I had before, so that might help a lot too. Even so, it's pretty frustrating when leveling with a mage and seeing them kill two to three mobs before you finish your first...
I know exactly how you feel. When I hit 58 about a week ago, I respecced from shadow to disc/holy, and wow, it hurt. It was taking forever to kill things (after I finally figured out a spell rotation - I died lots figuring it out.)
And it is disheartening to see everyone else kill so much faster than me, but I did roll a priest to heal... and in some odd way, it makes me want to stick it out. 'cause practically
everyone
is shadow up until end game - I wouldn't mind being one of the few that finish leveling holy.
What doesn't (literally) kill you only makes you stronger. (I hope)

Well, Idk, I liked disc for the little that I was in it, but that was before VT and CoH. If you want to heal, I would run CoH 20/41/0 spec. Disc/holy is more pvp spec. If you want to quest, you want lol smite spec, and CoH gets you out of trouble when you pull too many at once. I also like lightwell for instances, so if I die I can plant that thing and either wait for res, or start running and hope it's enough to keep the instance group alive.
This is just IMO. I'm sure many will argue, but I've found that with any class, if you go either full heal/dps/prot(for the mutts-priest, pally, druid-dunno sham, but prolly them too) you want to go all the way. Get to the top and it will help you out a lot. End game strat is different than leveling/questing. I could quest easily as full holy with damage gear. But, once I discovered VT, shadow is definitely the way to quest IMO. My 63 shadow is fun to play, but I'm used to wearing plate, so the squishiness of the class kinda bugs me. I was smite spec till VT, then went shadow and plan on staying shadow to 2v2 with a friend who has a rogue that just hit 70(punk plays all day while I'm stuck at work... QQ ). I plan on staying shadow only because of my main being a holy priest. Maybe some day when I get into massive raiding I'll respec holy, but I think I'll leave the healing to my pali and druid I'm trying to level. I'm hoping to have a full S1 ret set and respec by the time my druid hits 70, but I may keep him as a tank too.

I use this build and have no problems with taking down plenty of mobs and not resting. They go down very fast.

This is similar to a build that Zequel was recommending.
I guess it all depends on how much help with +healing you want. Empowered Healing is way awesome, and it hurts to lose it, but you do gain points in Imp DS and more in Mental Agility.
