So, what fun stuff have you done with it? Also, any usefull things to keep in mind regarding it in WotLK?

If i remember correctly, there are quite some mobs with spell-stealable buffs. Think 20% faster casting for a whopping 2 minutes. Just today i did CoT, and some of the mobs actually had some great buffs i could spellsteal to help our party and help myself at the same time :) (although you generally shouldnt do it, because you'll lose quite some DPS :/)
Its still fun to spellsteal priests' shields and lock bubbles :D i wouldnt start stealing Hots since it will cost you more than you'll gain. Too bad pala's have so many buffs: i cant even properly spellsteal HoF to get rid of the snare-immunity :(

you can also spell steal the sheild from the guys in Utguarde keep, very nice as it grants you immunity from all damage (or all physical damage, i cant remember) and with that up all mele dps cant do anything to the target

To add to the comment about the immunity shield in UK, they also do a dmg shield that ticks for a lot of fire dmg to mobs around it. It's a nice thing to steal since it saves a lot of damage done to your party and increases your own damage dealt.
