For Karazhan? Not that much, somewhere within the range of say 600-800 or so should really do the trick. Just make sure you get spell hit rating as much as you can, getting resisted sucks. 1000 bonus spell dmg for kara would be hillarious really.
Lets be realistic, you'll either be wearing PvP gear, heroic blues or some crafted items. You are not going to reach 1000 spell dmg. So if you craft all the shadowcloth or spellcloth stuff you should really be set for quite some time.

1000 spell dmg? A combination of gear, enchants and gems does the trick for you. To that you add sucking down potions/flasks eating food buff and other raid buffs and you pass the 1000 mark with ease.

in blue gear, with a couple consumables, i can get to 600 spell damage. i'm ready to start kara.
1000 is with epics that have enchants, spellthreads, and glyphs.

Rolling two times the same class :O?
Anyway, I'm on top of the Damage Meter in Karazan (or second, all depend) and I only have +815 spell dmg. Just be sure to get spell hit rating (I have around 70 and it seem to be okay for now), and you should do just fine.

I have just run through BRD a few times with my first Mage, she is Undead (just liked you to know that WotF is great) and at lvl 57. I am Frost-spcced and I normally deal 620-650 damage per Frostbolt and close to 1000 on crit. I have no points in Ice Shards either. So 1000 damage at lvl 70 does not sound to unlikely =)
