1) I'd recommend enhancement until you hit Outland, then get the quest gear for elemental and respec.
2) Been too long since I've leveled, and I suggest you pick talents that are based around your crits. You will come to love to see a Windfury crit on a Stormstrike, or a triple (quadruple if you get the glyph) crit on a Chain Lightning.
3) It depends on the server. For example, on US-Kael'Thas, Heavy Borean Leather is extremely pricey, so being a skinner/leatherworker will pay off. Just pick up at least one gathering profession and sell what you don't use on the Auction House. At the higher crafting profession levels, you usually can offer something that's in high demand. Blacksmiths can make the belt buckles and weapons, engineers can make potion converter kits and ranged weapon-related items, jewelcrafters can make gems and some epic jewelry, alchemists offer potions and elixirs, enchanters offer enchants, scribes offer scrolls, vellum for enchants, and glyphs, leatherworkers offer armor kits and specialty bags, and tailors offer spellthread and bags.
3) Check the Auction House few days, and see what seems to be the most profitable. Keep in mind that most of the real money-makers require you to put in much effort just to see a profit.

do 2 gathering profs for lots of money, just check the AH to see what is more demanded, ore/bars or herbs then choose

I suggest Enhance.
I've done all my leveling as Enhance. I respecced to Resto at 70 for raiding in BC, and will be respeccing Resto again at 80 after I get some gold farming done for raiding in Wrath.
I picked up some fine healing pieces on my road from 70 to 80, the only thing I didn't end up replacing was one ring.
70-80 I only stopped to drink before doing a 3-player group quest.
Wolves + Sham. rage give you the boost you need for a 2-player.
Wolves + Sham. rage + Bloodlust + Fire ele and a 3-player group quest should be fine.
My grind 1-70 was a little bit more rough, doing it before the new talents and before Water Shield was available since level 20 (When I leveled, I think it was level 62 that you got the first rank).
When I got low on mana, I minimized casting (Just melee) and when HP got low as well, I'd eat+drink to save some time.
Once you get Sham. rage, downtime is minimal. Wolves make downtime non-existent.
