I haven't dueled too many pallies, but I have played as one for a long time.
From a pally perspective, keeping a rogue from moving as much as possible works best. Things like SoJ, HoJ, Repentance ... all good stuns. Concecrate is good because it'll keep ticking away on you and you can't stealth.
The pallies spec will change the fight a lot, as a prot pally would be hard to beat (too much armor). But a holy pallies spells can be interrupted, wound poison applied (cleanse using even more mana), and just whittle away at him. Ret I believe is just like fighting an arms warrior, you don't want to fight a good one.
Correct me if I'm wrong though.

You should always have expose armor (5p) up at all time, this helps alot. Your auto attack, as well as all your special attacks benifit much more from that. Also try keep a distans sometimes and restealth, might work on some pallys. Run out of concecration and he will follow you. Save the trinket for that nasty stun they have and you should have no problem.

ret is get down or CC fast as possible....
healadins, dont rly burst....go more cons on wound poison (they not damage dealers so you got time) do not blow all energy on them before they get less then 50 % as here the trick......if he get below 50% he will just heal right? then kick his balls!(if tis male) okey now burst before he can hit the bubble as he cant heal, if he manage to bubble run on range get in stealth or stand bandage same tactic but this time...no bubble, but a skilled know how BoP work...they not easy to beat but its a way but wound poison is the key and kick is you pal, ....if he jsut heals from start of fight= you won....as no damage= no worry for you as energy regen much better then mana
protadins.....to admit i not met them in pvp.....i can only say bleed him out?
paladins are tough for non-casters
