You are absolutely correct in your conclusions. Protection itself is not hard to quest, in fact, questing is the exact same. The grinding can be slower, due to less DPS, but appropriate gear can compensate via survivability. Also, for those on PVP servers, many (knowing) players will avoid a Protection warrior.
One thing you may wish to try is putting on some DPS gear & dual wielding -- use Devastate & see how it goes for you!

I would recommend changing a few talents in your build, primarily the lack of Last Stand & Vitality, and the inclusion of Tactical Mastery.

I included Imp. Bloodrage, of course those two points are always flexible (change that if you want).
As far as gear goes, you are not yet uncritable (don't expect it while leveling, though). However, you are uncrushable! Only creatures 3 levels higher than you will crush (normally), but it was worth mentioning (enjoy being uncrushable!).

Imperial Plate Bracers are a great recipe to level up. I would recommend waiting until you have an epic ground mount, though -- it will greatly enhance your ability to quickly & thoroughly mine Thorium. Trust me, I did that once upon a time (swordsmith here!).
Now, about the upgrades. I think you can handle that on your own, and appear to be doing so. There really isn't much reason to go over your gear, you are leveling & it will change many times over.
As far as learning the moves, it's going to be different using Sword & Board for grinding, than holding aggro (not much, but how can you tell if you are alone?).

there's almost no difference between fast+slow weapons for tanking unless you have a full rage bar and you're spamming HS/Cleave.
Amen to that.

I'm glad to read of so much success, mthomas768!
I selected TM to benefit stance dancing and see how it worked out.
There is little benefit to Tactical Mastery other than the ability to Intercept easily...this is because with Focused Rage & other similar talents, there are almost no offensive abilities which cost more than the rage kept after stance dancing. To exemplify, Revenge costs 2 rage & Devastate costs 9.
I would like to elaborate on what Quab & others are saying about slow/fast tanking weapons. Your question was what speed should you use for solo Devastate grinding. The answer is slow because there will be no rage dumping, etc. Heroic Strikes will not occur often & Devastate will be more efficient in a short period of time if it just hits harder. If the slow or fast weapon as the same DPS, then differences will be minimal.
The reason the slow or fast debate even occurs is dependent upon Heroic Strike. In order to deal more Heroic Strikes in a set time frame, one must use a faster weapon (because it relies on next attacks).
Tank hard & prosper (yes, I stole that).
