I honestly have to agree with Godzilla on his explainations, but I'll throw in my 2 cents as well:
Alchemy: Can never go wrong with potions. Its a decent money maker (transmutes are ALWAYS in demand) and since you already have herbalism, its not a bad idea. The buff thing is true, and those Alchemist stones are tasty.
Blacksmithing: Ouch. Seriously though, if you want a nice end game weapon this is the place to get it, but getting there is one of the most time/money consuming prospects. It definetly ranks up there with Engineering as a hole into which money is tossed until it eventually coughs up decent returns.
Enchanting: Nice to be able to enchant your own stuff, mats generally sell well, and if you are dilligent in gathering patterns, the revenue will pour in. Not a terrible choice considering you'll be making money hand over fist with just another gathering profession.
Engineering: Never levelled one myself, but it looks like a hoot. Its the same kind of investment as Blacksmithing, but the bombs, and other miscellany you can make are a more immediate return than your weapon. GGG is right on the money again with the goggle suggestion. Also, Flying Machines are super sweet.
Jewelcrafting: Similar to Enchanting as far as I can tell as far as investments, rewards and returns go. Plus you have mining, and prospecting ore is like a little mini game full of surprises. Or disappointments. Luck of the draw and all that.
Leatherworking: I have... 3 different Leatherworkers at 300+ LW. Don't ask why, I'm a glutton for punishment. More so now that its come to be decided that there are VERY few really good LW patterns. But they are REALLY good, so don't just toss it asside. That and armor kits are fun. But neither of your gathering professions is skinning, so it will get pricey, and or extremely time consuming to level.
Tailoring: Yeah um... Don't bother. Unless you REALLY like bags, in which case, go nuts.
Thats all my insight into profession choices. Your best bets personally, in my humble opinion, are Alchemy, Smithing, Jewelcrafting, or Engineering, just to go with one or the other of your gathering professions. But its all up to you in the end, so just choose something you'll have fun with.
