As Darkrift said, it all depends on what you want to do. If you want to make cash then pick two gathering profs, if you want to make your own gear then go for blacksmithing or leatherworking, etc.
I'm herb/alchy because I have a good guild who can make anything that I need, and I return the favour by making them pots or transmutes.
